One of our favorite and most popular recipes, especially around Thanksgiving and Christmas, is Cranberry and Brie Baked Cheese Appetizer Recipe. It is a delicious combination of a flaky crescent dough crust around a round of brie topped with cranberry sauce.
Cranberry Brie Bites takes those same ingredients to make adorable bite-sized versions of this same delicious appetizer. They are a little easier to transport so they are great for potlucks.

- Crescent Croissant Roll Dough in a tube
- Brie cheese round
- Cranberry sauce – make sure to use sauce and not the jellied version

Preheat your oven to 375 degrees. Liberally spray two mini muffin trays with baking spray. Set them aside.
Open the tube of dough and roll the crescent dough out on a clean surface or cutting board. Pinch together the pre-cut creases, then use a pizza cutter to cut the dough into 24 equal squares. Do 6 columns from the top and 4 rows from the side.
Place each cut crescent dough square in the prepared mini muffin trays.
Gently press the center of each piece of dough down into the cup to form a small muffin cup.
Remove the brie from its packaging. Cut up the brie into 24 pieces and divide it among all muffin cups. The outside rind of the brie is edible. You can leave it on or take it off – totally up to you! If you can’t find brie, you can use any soft cheese.
Top each piece of brie with a teaspoon of cranberry sauce.
Bake for 10-12 minutes, until lightly golden. Allow the cranberry brie bites to cool for a few minutes and then remove from the pan to serve. These are best served hot and warm so that the cheese is melty and nice.

- 250g Brie Cheese, or other cheese of choice
- 1/2 cup Cranberry Sauce
Instructions
- Preheat oven to 375F.
- Liberally spray two mini muffin trays with baking spray and set them aside.
- Roll the crescent roll dough out on a clean surface or cutting board. Pinch together the pre-cut creases, then use a pizza cutter to cut the dough into 24 equal squares.
- Place each cut crescent dough square in the prepared mini muffin trays. Press down to form a small muffin cup.
- Cut up the brie into 24 pieces and divide it among all muffin cups.
- Top with a teaspoon of cranberry sauce.
- Bake for 10-12 minutes, until lightly golden.
