How to Make Stromboli Dough
This stromboli is an enriched dough. Normally pizza dough is made with just flour, salt, and yeast. The milk and egg added to this dough make it richer and more bread-like. If you prefer more pizza dough, you can use this Basic Pizza Dough recipe.
To make the enriched dough, start by warming the milk. You can warm it in the microwave or on a stovetop. You want the milk luke warm, not hot. If it is too hot, it will kill the yeast.
Mix together yeast with sugar, warm milk, and 3 tablespoons of flour in a bowl. Let sit for 10 minutes.
After 10 minutes, add the egg, salt, remaining flour, and melted butter.
Knead the dough, and add a little flour as needed if the dough seems too liquidy. If the dough is sticky, you can put some oil on your hands.
Leave the dough to rise in a warm place for 40 minutes, and cover with a towel.
How to Make the Stromboli
Once the dough has risen, pre-heat the oven to 350 degrees. Take the dough out of the bowl and place it on a baking mat or parchment paper. You can bake the stromboli in a 9 x 13 pan, a cookie sheet, baking sheet, etc. Anything that fits it will work. Make sure your mat or parchment fits whatever you choose to bake on.
Roll out the dough into a rectangle on the mat or parchment paper. Mix together half the butter and the crushed garlic. Brush the dough with half the melted butter mixed with the crushed garlic.
Sprinkle the dough rectangle liberally with half the grated mozzarella. Evenly spread the ham slices on top of the cheese.
Layer the salami and pepperoni on top of the ham. Sprinkle with the other half of the mozzarella.
Roll the dough on the long sides into a roll. There will be dough in the middle. Pinch the ends and the back closed. Make sure the stromboli is seam side down.
In a small bowl, mix together the other half of the melted butter with Parmesan and herbs. You can use any herbs you like. We used fresh dill. Dried dill, oregano, basil and rosemary would be delicious, too.
Use a sharp knife to cut slits diagonally across the top of the dough. Brush the butter herb mixture liberally over the stromboli.
Move the stromboli on the baking mat or parchment paper onto the baking sheet or baking pan. Bake in the oven for 40 minutes at 350 degrees.
Once the stromboli has finished baking, slice and serve with a side of homemade pizza sauce or marinara sauce.
