Slow Cooker Loaded Potatoes
Slow Cooker Loaded Potatoes Ingredients:
- Red potatoes – you could also use baking potatoes or Yukon gold
- Paprika
- Salt
- Black pepper
- Shredded cheddar cheese – or any other cheese you like or have on hand
- Real bacon bits – You can also use cooked crumbled bacon
- Green onion or chives, your choice
- Sour cream
Slow Cooker Loaded Potatoes Ingredients:
Line the crock of your slow cooker with aluminum foil. You will cook the potatoes inside the foil like a packet. Place the potatoes in the slow cooker.
Blend the paprika, salt, and pepper together in a small bowl. Toss together the potatoes and seasoning blend.
Add in 2 ½ cups cheese, the bacon bits, and green onion or chives.
Toss it all together to combine.
Fold the aluminum foil over the potatoes. Cover with the slow cooker lid.
Cook on low for 3 hours. Just before the potatoes are ready, preheat the broiler.
Transfer the loaded potatoes to a broiler-safe baking dish. Sprinkle with remaining cheese.
Place under the broiler until the cheese has melted and the edges begin to crisp.
Garnish with sour cream and additional green onions or chives.
Slow Cooker Loaded Potatoes with Bacon and Cheese
Ingredients
- 3 pounds red potatoes scrubbed and cut into 1 to 2-inch cubes
- 1 tablespoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 cups shredded cheddar cheese
- ½ to 1 cup real bacon bits
- ¼ cup sliced green onion or chives your choice, plus additional for garnish
- Sour cream for garnish
Instructions
- Line the crock of your slow cooker with aluminum foil. You will cook the potatoes inside the foil like a packet.
- Blend the seasonings together.
- Inside the slow cooker, toss together the potatoes and seasoning blend.
- Then add in 2 ½ cups cheese, the bacon bits, and green onion or chives, and toss to combine.
- Fold the aluminum foil over the potatoes. Cover with the slow cooker lid.
- Cook on low for 3 hours. Just before the potatoes are ready, preheat the broiler.
- Carefully transfer the foil packet with the loaded potatoes to a broiler-safe baking dish. Place the packet in the dish and open the foil up.
- Sprinkle with remaining cheese.
- Place under the broiler until the cheese has melted and the edges begin to crisp.
- Garnish with sour cream and additional green onions or chives.
