Ingredients

  • 3 pounds red potatoes scrubbed and cut into 1 to 2-inch cubes
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 cups shredded cheddar cheese
  • ½ to 1 cup real bacon bits
  • ¼ cup sliced green onion or chives your choice, plus additional for garnish
  • Sour cream for garnish

Instructions

  • Line the crock of your slow cooker with aluminum foil. You will cook the potatoes inside the foil like a packet.
  • Blend the seasonings together.
  • Inside the slow cooker, toss together the potatoes and seasoning blend.
  • Then add in 2 ½ cups cheese, the bacon bits, and green onion or chives, and toss to combine.
  • Fold the aluminum foil over the potatoes. Cover with the slow cooker lid.
  • Cook on low for 3 hours. Just before the potatoes are ready, preheat the broiler.
  • Carefully transfer the foil packet with the loaded potatoes to a broiler-safe baking dish. Place the packet in the dish and open the foil up.
  • Sprinkle with remaining cheese.
  • Place under the broiler until the cheese has melted and the edges begin to crisp.
  • Garnish with sour cream and additional green onions or chives.
