Cutting wheat and gluten out of your diet is overwhelming to say the least. All of a sudden staples like toast, sandwiches and pasta are no longer a menu option. When we cut wheat out of our diet a few months ago having several go to sources for recipes was absolutely essential to succeeding in making changes to our diet.
I purchased a few gluten free cookbooks and have been happy with the recipes in most of them. I’ve also spent time searching the internet for gluten free recipes. My newest find for gluten free recipes has been the Foodie by Glam app. The app is available in the iTunes store and I downloaded it right to my phone. There is a week’s worth of meals on the gluten free version – from Meatless Monday to Sunday Supper. I had a really hard time choosing just one to share with you. I ended up choosing Pineapple-Mango-Green-A-Colada. Smoothies have become one of my favorite gluten free breakfast and snack foods, but I’m still learning how to make them. Who knew it was so hard to get the ratio of fruits right?!
What I really loved about this smoothie is that it didn’t have banana in it. I really don’t like bananas in my smoothies because I can’t taste anything but banana when I use one. I had my doubts that a smoothie could be creamy with out a banana, but this recipe proved me wrong. I used fresh pineapple, frozen mango, spinach and coconut milk. The recipe gives you quite a bit of latitude in using fresh or frozen fruit so I went with what I had on hand. I loved this smoothie.
