Make your own ice cream sandwiches this summer for a fun family treat! Pair homemade or store bought ice cream with chocolate chip cookies and use Wet-Nap wipes to clean up sticky hands and faces.
As the weather gets warmer, my kids thoughts turn to staying up later, going to the pool, and eating lots of ice cream. I really enjoy making homemade ice cream during the summer like 3 Ingredient Ice Cream, Chocolate Gelato, and Pumpkin Ice Cream. But after about mid-June, we all get a little bored of just plain ice cream. One of our favorite treats is to take homemade chocolate chip cookies and pair them with ice cream for homemade ice cream sandwiches.
The basic ingredients are your favorite cookie and your favorite ice cream. I usually do homemade cookies paired with a store bought ice cream, but this time I decided to go all out and used both homemade cookies and ice cream.
The one down side to making ice cream sandwiches with homemade ice cream is that it seems to melt very quickly. So before you start, get out the Wet-Nap wipes to have handy to wipe down sticky hands and faces. I really missed having wipes on hand after we stopped carrying a diaper bag so now I have a tub of Wet-Nap wipes in my car at all times. Now that you are prepared to clean up the mess, start by laying out your cookies. Try to pair them by size so you get even sandwiches.
Let the ice cream soften just a little and then start scooping on to one cookie. Work quickly because the ice cream melts quickly!
Then gently place the other cookie on top and gently push down. At this point, my ice cream was really starting to melt so I grabbed the Wet-Nap container and let the kids start eating. Wet-Nap wipes also worked great for cleaning up the table!
