One of the best parts of spring is nice large stalks of asparagus. It’s great that asparagus is now available pretty much year-round but nothing beats a large stalk you can find in the spring. Grilled or roasted asparagus is an easy way to cook asparagus. But these puff pastry asparagus bundles are great for a spring dinner or Easter. They are ready to serve in about 20 minutes making them a great spring side dish recipe.
Puff Pastry Asparagus Bundles Recipe
Puff Pastry Asparagus Pockets Ingredients:
- Asparagus (about 12 asparagus stalks)
- Olive oil
- Salt and black pepper
- Puff pastry, thawed
- Shredded Italian cheese blend
- Egg
Other add-ins:
You can easily add in meats and other cheeses to make your asparagus pastry puffs even tastier. Some ideas for add ons are:
- Proscuitto
- Cooked bacon
- Gruyere cheese
- Parmesan cheese
Puff Pastry Asparagus Pockets Directions:
Preheat the oven to 425 degrees. Prepare a large, rimmed baking sheet with parchment paper spritzed with nonstick cooking spray. Roll out each sheet of puff pastry on a lightly floured surface. Cut each sheet into 6 equal rectangles.
When choosing asparagus, look for nice large stalks. These are usually easy to find in the spring when asparagus is in season. If you can only find small asparagus stalks, use more in each bundle.
Place 2 asparagus on each rectangle diagonally. If you are using bacon or prosciutto put those under the asparagus and then layer the vegetable on top of the meat.
Sprinkle the asparagus with salt and black pepper as desired. Top with a sprinkle of cheese.
Fold the opposite ends of the puff pastry over the asparagus. Place on the prepared baking sheet. Brush the puff pastry with the beaten egg. You can use a little bit of the egg under the corners to help the puff pastry stick down if needed.
Sprinkle each bundle with additional salt and black pepper if desired.
Bake for 12 to 15 minutes or until the puff pastry is golden.

- 1 17.3 ounce box puff pastry, thawed
- ½ cup shredded Italian cheese blend
- 1 egg beaten
