Cheesy baked bacon egg cups are an easy breakfast recipe that bake up in the oven so you can spend less time at the stove and more time with your family.
I think it’s pretty common knowledge that eating meals together as a family is important. In fact, family meals eaten at home have been proven to benefit the health and wellness of children and adolescents, to fight obesity, substance abuse and to make families stronger – creating a positive impact on our communities and our nation as a whole.
But I know first hand what a struggle it can be to get a meal on the table. Between long hours spent working and all the activities everyone is involved in, it’s hard to eat at home!
September is the National Family Meals Month. My family has been lucky this year that our kids school starts earlier enabling us to eat breakfast together every day – even if it is at 6:15 AM.
At that early in the morning, however, the last thing I want to do is be standing in the front of the stove cooking while my family spends time together without me. So I decided to let my oven do the cooking while I spend time with my family.
Easy Cheesy Baked Bacon Egg Cups Recipe
We love bacon. We love bacon a lot. A family breakfast isn’t complete without it. I picked up this cool Hormel Black Label bacon variety pack at Sam’s Club. We’re looking forward to trying out all the different flavors.
I started by putting a slice of bacon in each muffin cup of a greased muffin tin.
Next, fill each tin about 1/2 full with whipped egg mixture. After trial and I error I found that 1/2 an egg for each cup works perfectly.
Put the muffin tin in the oven and let bake for 20-30 minutes. While it bakes you can sit at the table with your family and talk.
Remove from the oven and carefully remove the cups to plates. Serve nice and hot!

Baked Bacon Egg Cups
Eggs are cooked inside bacon for a portable breakfast.
Ingredients
- 6 pieces of Hormel Black Label Bacon
- 3 eggs
- Salt and Pepper to taste
- Shredded cheese (optional)
Instructions
- Preheat the oven to 375 degrees. Grease the bottom and edges of the cups of a muffin tin.
- Wrap 1 piece of bacon around the edges of each cup of the muffin tin overlapping the edges.
- In a liquid measuring cup, whisk eggs with a little bit of water (about a teaspoon). Add salt, pepper, and cheese to taste.
- Carefully fill each bacon-lined muffin cup 1/2 full with the egg mix. Top with a little shredded cheese if desired
- Bake for 20-30 minutes or until the eggs are puffy and spring back when gently poked.
- Serve immediately.
