Ingredients
  

Black Cherry Filling

  • 4 1/2 cups frozen black cherries thawed, drained and roughly chopped
  • 1/4 cup honey
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/4 teaspoon cloves
  • Scant 1/2 teaspoon dried thyme or 1 Tablespoon fresh thyme chopped

Cobbler Topping

  • 1 cup rolled oats
  • 1/2 cup all purpose or almond flour
  • 1/2 cup chopped pecans
  • 1/3 cup honey
  • 3 Tablespoons melted butter
  • 2 Tablespoons liquid coconut oil
  • 1/8 teaspoon salt

Instructions
 

  • Place the top oven rack in the center position and pre-heat the oven to 350°F. 
  • Combine thawed chopped cherries, honey, cinnamon, allspice, cloves, and thyme leaves in a bowl. Mix together and set aside. 
  • Add the topping ingredients to a separate bowl and stir until oats are thoroughly coated and all ingredients are well combined. Set aside. 
  • Lightly grease baking dish or dishes.
  • If baking one large cobbler, pour the cherry topping into the dish. Spread the topping evenly on top.
  • If baking individual cobblers, divide the cherry mixture equally among the cast iron mini-servers and spread into an even layer. Divide the topping between the 4 mini-servers, as well, and spread into a thin layer on top. 
  • Place into the pre-heated oven and bake for 30 minutes, or until the top is nicely browned and the cherry mixture is nice and bubbly.
  • Remove from oven and set aside to cool for at least 5-10 minutes before serving plain or topped with some Greek yogurt, whipped cream, and/or ice cream. Garnish with a couple of sprigs of fresh thyme, if desired.
