Slow Cooker Black Eyed Peas ( Hoppin' John)

Make slow cooker black-eyed peas using canned beans, ham, and rice in honor of the Southern tradition of eating black-eyed peas for luck.

Ingredients
  

  • 1 can 15 ounces Black-Eyed Peas
  • 3/4 cups Onion diced
  • 3 stalks Celery diced
  • 1 small Bell Pepper any color, diced
  • 1 cup Smoked Ham cut into small bite-sized pieces
  • 1/4 - 1/2 cup Cilantro chopped (optional)
  • Salt and pepper to taste
  • 1 teaspoon Cajun Seasoning
  • 2 Bay Leaves
  • 1 teaspoon Minced Garlic
  • 1 can 6 ounces Spicy V-8 Juice
  • 1 cup Water or 1 can Diced Tomatoes optional
  • 1 cup Cooked Jasmine or Long Grain Rice of choice

Instructions
 

  • Add all ingredients except cooked rice to slow cooker and cook on low for 2-3 hours.
  • Remove bay leaves.
  • Stir in hot cooked rice and serve.

Notes

Optional: Chopped green onions tops, chopped cilantro, cherry tomatoes, or crumbled bacon can be used as a garnish.
