Vermicelli noodles are topped with marinated chicken thighs and fresh herbs and veggies before being covered in a homemade spice peanut sauce.

We provide plenty of substitution ideas if you don’t have a robust grocery store near you. Don’t be afraid to try new ingredients, too! You can use some of these same ingredients in our Thai Shrimp Meatballs.
Sriracha Chicken Vermicelli Noodle Bowls Ingredients:
- Boneless and skinless chicken thighs
- Package of vermicelli noodles – these are rice noodles and are pretty easy to find in the grocery stores. You can also use another thin rice noodle or angel hair pasta
- Lettuce
- Cilantro
- Carrots
- Peanuts, chopped
- Lime wedges, jalapeno, and fresh mint leaves for garnish
- Soy sauce or coconut aminos
- Sriracha
- Peanut Butter
- Ginger
- Garlic
- Garlic chili sauce – this is a Vietnamese item and is found in the Asian food aisle. You can use sriracha and some extra garlic as a substitute.
- Rice vinegar – substitute apple cider vinegar if you don’t have rice vinegar
Vermicelli Noodle Bowl Recipe Instructions:
Mix together the soy sauce and sriracha in a large bowl.
Add the chicken thighs and marinate for 10 minutes.
Wash and prep the vegetables. Chop the lettuce, slice the jalapenos, and julienne the carrots. You can add other toppings to the noodle bowl, too such as julienned cucumbers, bell peppers, red cabbage, and bean sprouts. Set all veggie toppings aside.
Next, make the spicy peanut sauce. In a small bowl, combine the peanut butter, grated ginger, minced garlic, garlic chili sauce, soy sauce, rice vinegar, and warm water.
Add more water as needed to thin the sauce to desired consistency. Mix until evenly combined. Set the sauce aside.
Heat a tablespoon of oil in a cast-iron pan over medium heat. Add the marinated chicken and cover it with a lid. Cook 10 minutes on each side. Keep the lid on so it doesn’t dry out the chicken.
The chicken gets charred because of the sauce but it’s seriously still so soft and tender cooked this way. Don’t change the cooking time on it. Trust the process. You could also grill the chicken instead of cooking it in a pan.
Once cooked through, remove the chicken from the heat and onto a cutting board. Allow the chicken to cool and then slice.
While the chicken cooks, prepare the vermicelli noodles according to package instructions. Ours was to boil for 2 minutes, strain, and then rinse with cold water. Set the noodles aside.
Once all the ingredients are ready, it’s time to assemble your vermicelli noodle bowls. Add the noodles, lettuce, cilantro, carrots, cucumber, and chicken to a large bowl.
Then top with the chopped peanuts, lime wedges, jalapeno slices, and fresh mint leaves.
Pour the spicy peanut sauce over the bowl and enjoy! You can serve with sriracha on the side as well!
Chicken Vermicelli Noodle Bowls
Ingredients
- 1 lb boneless and skinless chicken thighs
- 6 oz package of rice noodles
- 1 head lettuce
- 1 bunch cilantro
- 3 large carrots julienned
- ¼ cup peanuts chopped
- Lime wedges jalapeno, and fresh mint leaves for garnish
Marinade:
- 1/4 cup soy sauce or coconut aminos
- 2-3 Tablespoons sriracha
Spicy Peanut Sauce
- ½ cup peanut butter
- 1 Tbsp ginger grated
- 3 garlic cloves minced
- 3 Tbsp garlic chili sauce
- 3 Tbsp soy sauce
- 3 Tbsp rice vinegar
- ½ cup warm water or more to thin the sauce to desired consistency
Instructions
- Stir together soy sauce and sriracha in a large bowl. Add chicken and marinate for 10 minutes.
- Wash and prep your vegetables. Chop the lettuce and julienne the carrots. Set all veggie toppings aside.
- In a small bowl, combine the peanut butter, grated ginger, minced garlic, garlic chili sauce, soy sauce, rice vinegar, and warm water. Add more water as needed to thin the sauce to desired consistency. Mix until evenly combined.
- Heat 1 tablespoon of oil in a cast-iron pan over medium heat.
- Add chicken and cover with a lid. Cook covered for 10 minutes on each side.
- When cooked through, slice chicken into thick strips.
- Cook noodles according to package instructions.
- Begin assembling your vermicelli noodle bowls. Add the noodles, lettuce, cilantro, carrots, cucumber, and chicken.
- Top withchopped peanuts, lime wedges, jalapeno slices, and fresh mint leaves. Pour the sauce over and enjoy.
