Roasted garlic broccoli is a quick and easy side dish to make for dinner. Toss broccoli with oil, garlic and seasonings and then roast until tender.
Give steamed broccoli a make over by roasting it with garlic. Use as much or as little garlic as your family prefers. The best apart about roasting garlic is that it does not end up mushy or over cooked.

Roasted Garlic Broccoli Ingredients:
- Broccoli crowns or a bag of cut up fresh broccoli
- Garlic, minced
- Salt and pepper
Roasted Garlic Broccoli Directions:
Preheat your oven to 425. You want to roast vegetables around 425-450 degrees. Lightly grease a baking stone or baking sheet. You can use a spray or drizzle some olive oil on the sheet. This just helps the broccoli not to stick to the sheet when cooking.
Next prepare the broccoli. You want to use fresh broccoli. Frozen vegetables don’t roast well because they are too wet. Cut the fresh broccoli into bite size pieces. You can also buy a bag of already cut up broccoli and use that.
Put the chopped broccoli in a mixing bowl. Drizzle with oil and mix well. Olive oil is great for roasting veggies. You can also use coconut oil or any higher heat oil. for another great veggie side dish. You want the broccoli to be coated, but not dripping, in oil.
Once the broccoli is well coated in oil add the minced garlic and mix well. A jar of minced garlic stashed in the fridge is a time saver. A garlic press helps save time on dicing fresh heads of garlic. If you don’t have fresh garlic you can use garlic powder, granulated garlic or even garlic salt. If you use garlic salt, skip seasoning it with regular salt.
Season with salt and pepper and toss it again to make sure it is seasoned and coated well.
To cooke the broccoli, spread the garlic broccoli mixture onto your prepared baking sheet. Roast in the oven for 20 minutes or until the broccoli is tender. This may take a few minutes longer depending on the thickness of the broccoli pieces.
Once the roasted garlic broccoli is tender and slightly browned, remove it from the oven. Allow to cool a bit, but not completely, before serving.

- Cut broccoli into bite size pieces and place in a mixing bowl. Drizzle with oil and mix well. Add garlic and mix well. Season with salt and pepper.
- Spread onto prepared baking sheet and bake for 20 minutes or until broccoli is tender.
