Welcome fall with this pumpkin pie baked oatmeal! Pumpkin is combined with fall inspired spices and then baked for a delicious baked oatmeal breakfast.
Oatmeal is a really hard sell as a breakfast dish around here. We all love it in breakfast cookies but as a solitary breakfast dish… not so much. I have to admit that I’m not much of a fan of oatmeal, either. I eat it because it’s inexpensive and good for me, but it’s not my favorite breakfast food by a long shot. Despite our oatmeal misgivings, every few months I try out a new baked oatmeal recipe to see if we’ll eat it. I’m convinced that if we eat it enough, eventually we’ll like it.
Now that it’s fall and all things pumpkin are coming out of my oven, Pumpkin Pie Baked Oatmeal seemed to be the perfect way to try oatmeal again. And we liked it! I think a dollop of cinnamon whipped cream would make it even better. If you actually like oatmeal and pumpkin — you are going to love this!
