This pineapple upside down cake vodka cocktail recipe is a great tropical drink, perfect for summer!
My absolute favorite cake is pineapple upside down cake. Which has nothing to do with how this cocktail was made, honestly. Actually, my husband thinks I made this using witchcraft. The taste is SPOT ON.
I promise I didn’t, though.
My dad actually told me about the pineapple juice, grenadine, and coconut rum. Which is delicious. And I used the rum, but I wondered how a vanilla vodka cocktail would taste (since I don’t often use it. Is it just me, or does coconut rum have more uses?).
Don’t mind the Shipwreck in the background, I took the pictures with it (for some reason), but used vanilla vodka in the recipe.
The vodka coctkail recipe is easy! The only thing is that the cherry juice was a little difficult to find. If you have access to a store with its own organic section, it should be with those juices. The cherry juice I got is from Simple Truth and it’s just “tart cherry juice.”
There’s no layering to this one, unlike with the red, white, and blue shooters. Though I was tempted. 😛 But it would have taken forever with the measurements I used.
Last month, I turned German chocolate cake into a cocktail. So making dessert-flavored mixed drinks seems to be my new hobby.
This is so good and so perfect for summer. It’s also one of those drinks you can make a whole batch of relatively cheaply and easily, which is a HUGE bonus!

Pineapple Upside Down Cake Cocktail Recipe
Ingredients
- 4 oz pineapple juice
- 2 oz cherry juice
- 2 oz vanilla flavored vodka
- maraschino cherries and pineapple chunks, for garnish
Instructions
- Mix the liquids together. Put the cherry and pineapple chunk on a toothpick and lay it over the glass to garnish.
