Peaches and cream mini desserts are a fun summer treat! Peach gelatin is mixed with cream cheese, whipped cream and Del Monte peaches. This delicious peach mixture is layered between mini vanilla cookies for a cool and refreshing peaches and cream treat.
One of the things I look forward to most in the summer is peaches. There is nothing like eating a fresh peach! I love to make desserts with peaches, too, but I rarely do it because peeling and pitting them is such a time consuming chore. When Del Monte offered to send me a variety of their canned fruits and vegetables to create a recipe with, I knew I wanted to make a peach dessert that didn’t require all that peeling.

I made the peaches and cream desserts in small glasses because everything is cute when it’s small! But you could easily adapt this recipe for a larger dish or containers. You could also serve this right away but they do set up nicely when refrigerated. They also passed the kid taste test with flying colors! In a medium bowl, mix cream cheese and dry gelatin powder with an electric mixer until well blended.
Mix in peaches and whipped cream. Save a few peach peaches for garnishing the top of the desserts.
Put a mini vanilla wafer in the bottom of dessert dishes. Put 2 teaspoons of peach mixture on top of the cookie. Layer a few more times until dish is full, ending with peach mixture. Garnish with small piece of peach.
Refrigerate until firm. Serve.
