Parmesan Ranch Grilled Asparagus
Preheat an outdoor grill on medium high heat. You can also roast the asparagus in an oven or toaster oven. Preheat an oven at 400 degrees.
Begin by preparing some foil to cook the asparagus. First, fold a large piece of foil in half. The foil should be large enough to hold all of your asparagus in a single layer. You may want to double the foil to make it thicker if using regular foil. We really like to use Heavy Duty foil for cooking. It holds up well on the grill. Lay the foil out on a flat surface.
Next, prepare the asparagus. Trim the ends of the asparagus by breaking them off and discarding them. Just start to bend the asparagus and they will naturally break where the tough ends stop. Put the trimmed asparagus on the foil.
Next, drizzle the asparagus with oil. You will want to pick a high temp oil like grapeseed or coconut oil. But we honestly use olive oil all the time and it’s just fine since the asparagus is cooked pretty quickly.
You will want to coat the asparagus with the oil. Do this by folding up two ends of the foil together. Roll asparagus between foil to coat with the oil. Lay the foil flat again and lay asparagus in a single layer.
Sprinkle the asparagus with ranch dressing mix seasoning. You can also use this homemade Italian dressing mix. It’s delicious!
Transfer the foil with the asparagus on to a plate or platter to make it easier to get it outside to your grill. If you are roasting the asparagus in an oven, transfer the foil to a baking sheet.
To grill the asparagus, place the foil directly on grill and heat for 5-8 minutes, turning halfway through. Alternatively, roast in an oven for about 10-15 minutes.
Sprinkle with cheese and let heat for an additional 1-2 minutes or until melted.
