Make delicious parmesan garlic red potatoes in just a few minutes in the Instant Pot!
I got an Instant Pot for Christmas. I wasn’t really sure what I was going to cook in it, but everyone was raving about them so I decided to give it a try. I’ve always wanted a pressure cooker but was worried about it exploding. I figured an electric pot that does all the thinking for itself would be a good start.
And I love it! I haven’t used it a ton, but the recipes I have tried have been amazing and easy to make. We’ve made everything from hard boiled eggs to macaroni cheese with amazing results. And these potatoes are a super easy side dish you can throw together in a jif!
Instant Pot Parmesan Garlic Red Potatoes
Red potatoes are one of my favorite summer side dishes. We usually grill them, but they are so easy to whip up in the Instant Pot. Plus the list of ingredients here is so small – potatoes, water, oil, garlic and basil.
Start by using a knife to put a small cut in each potato. This makes sure that the potatoes don’t explode in the Instant Pot. You could also use a fork to make holes.
Place the steamer rack that came with the Instant Pot into the bottom of the pot. Pour 2 cups of water into the pot. Put the potatoes on the rack. You can add more or less depending on how many you need.
Seal the lid and close the pressure. Turn the Instant Pot on manual for 15 minutes. The pot has to come pressure first, then the potatoes cook for 15 minutes. So if you’re on a time schedule, make sure to give enough time for the pressure to rise. I’d give it about 30 minutes total. When the pot beeps that it’s done, let it sit for 5 minutes. Then do a quick release of the pressure.
BE CAREFUL when releasing the pressure! VERY HOT steam will come out of the top of the pot. I use a wooden spoon to turn the gasket to release the pressure. Putting your hand close to this will result in a burn!
While the pressure is releasing, heat garlic and oil in a pan or cast iron skillet. Carefully remove potatoes from the pressure cooker using tongs. Put the potatoes on a plate or cutting board and smash them with the bottom of a drinking glass. You just want break them up a little.
Use the tongs to put the potatoes into the pan with oil and garlic. Cook for about 3 minutes on each side. Season with salt and pepper.
