Fudge is my favorite candy to make.  Butter pecan fudge is my absolute favorite.  It's closely followed by Cookies and Cream Fudge, which is basically an OREO cookie in fudge form.   Every winter I am obsessed with the minty delight of chocolate sandwich cookies filled with a mint cream. So why not make them in to a fudge?

Fudge is actually very easy to make. In fact, you only need  3 ingredients plus the cookies to make this recipe! Fudge does take hands on cooking, though. It's important to keep the burner on a medium to low heat and to stir constantly. Candy making can go bad quickly if it's left unattended or is cooked on too high of a flame.

To crush the cookies, place them in a plastic bag and use a rolling pin or other heavy object to crush.  You don't want them super fine. Just broken in to decent sized chunks so they are easy to eat.  We did use OREO cookies in this recipe, but any mint chocolate sandwich cookie will work. Trader Joe's always has a mint version of their Joe's O's every December. Those will work, too.
Crush 3 cookies and set aside. Crush remaining 18 cookies and set aside.
Line a square baking sheet with aluminum foil and set aside. The foil will help remove the fudge easily.

In a medium saucepan, add sweetened condensed milk and chocolate chips. Heat on medium heat, stirring constantly until melted. Remove from heat and stir in vanilla and 18 crushed cookies.

Pour into prepared pan and smooth with the back of a spoon. Sprinkle 3 crushed cookies on top and gently press down into the fudge.

Cool to room temperature and place in the refrigerator for 30 minutes.

Remove from pan and remove foil from fudge. Cut into four long rectangles and angle your knife to cut into parallelograms.
