This bacon cheeseburger soup is so delicious, and it’s done in no time in the instant pot. You’ll love this recipe, it’s quick and easy, and you’ll never miss the bun. You get a hearty and healthy version of an old favorite that the whole family will love. You can serve this up with homemade potato chips or crackers, a wedge salad on a stick, or whatever your favorites are, and have a great dinner or lunch. Pop this one in your favorites.

Instant Pot Cheeseburger Soup Ingredients:

  • Bacon – cooked and crumbled
  • Ground round and ground pork – the pork helps give the meat a little more moisture
  • Onion – chopped
  • Garlic – chopped
  • Potatoes – peeled and cubed (or you can keep the peels on)
  • Chicken broth
  • Colby Jack and cheddar cheese – shredded
  • Heavy cream
  • Garlic salt
  • Seasoned salt
  • Pepper
  • Green Onions – chopped for garnish
  • Shaved Parmesan cheese – Optional – for topping

How to Make Instant Pot Cheeseburger Soup

Instant Pot on saute function for 30 minutes

Turn the Instant Pot “Sautee” setting on and allow the pan to heat up.

 Add the chopped onion and cook for 2-3 minutes. Then add the ground round and ground pork in the Instant Pot. Season with the garlic salt, seasoned salt and pepper. Continue to  cook until the ground round/pork until it’s brown, and no pink is visible. Drain off any excess fat.

Next add the chicken broth, and potatoes, and stir it all together.

Place the lid on the Instant pot, and make sure the pressure valve is set to SEALING, and press the manual button, and cook for 20 minutes. When the Instant Pot is done, it will beep, and go to OFF. Do a quick release by turning the pressure valve to ‘VENTING’, and allow all the pressure to be released. MAKE SURE the float valve has dropped down before you remove the lid.

If you’re not sure where the ‘FLOAT VALVE’ is on your Instant Pot, see your manual to identify the valve. Mine is right behind the pressure valve, on top of the lid, and it’s a small hole in the lid that contains the float valve. It moves up when the Pot is cooking, and will drop down when the pressure has all been released.

 

When the pressure is released, and the float valve is down, remove the lid to the Instant Pot.  Stir the soup. Add the garlic, cream, and shredded Colby Jack Cheese, and stir well. Place the lid loosely on the Instant Pot, not to cook, but just to cover the soup so the cheese will melt.

Once the cheese is melted, stir the soup again. Place the soup in serving bowls, and garnish, or top with shredded cheese, shaved Parmesan, (if desired), bacon and chopped green onions. Serve, and Enjoy!

Ingredients

  • 12 slices of bacon - cooked and crumbled
  • 1 pound of ground round and ground pork - combined
  • 1 large onion - chopped
  • 1 Tablespoon of garlic
  • 4 large potatoes - peeled and cubed
  • 3 1/2 cups of chicken broth
  • 2 cups of Colby Jack and cheddar cheese - shredded
  • 1 cup of heavy cream
  • 1 teaspoon of garlic salt
  • 1 teaspoon of seasoned salt
  • 1 teaspoon of pepper
  • Green Onions - chopped for garnish
  • Shaved Parmesan cheese - Optional - for topping

Instructions

  1. Turn the Instant Pot on to the Saute mode. Let it heat up.
  2. Add the chopped onion and cook for 2-3 minutes.
  3. Then add the ground round and ground pork in the Instant Pot. Season with the garlic salt, seasoned salt and pepper.

  5. Add the chicken broth, and potatoes, and stir together.
  6. Place the lid on the Instant pot, and make sure the pressure valve is set to SEALING, and press the manual button, and cook for 20 minutes.
