Make homemade banana bread muffins in to adorable groundhogs for Groundhog Day on February 2nd.
February 2nd is the day when the groundhog tells the world how many weeks of winter are left. If the groundhog sees his shadow (the day is sunny) then we supposedly have 6 more weeks of winter. I wonder how many times that old groundhog has actually been right?
Groundhog day is a fun day to celebrate something fun, either way. Making banana bread muffins in to a chubby little groundhog is a fun and easy recipe and craft. These are great to make with small kids! Bake the muffins first, and then decorate like a ground hog.
You can use any muffin recipe to make the groundhog muffins. Hint: You can buy muffins at the store even to make these even easier. We used the banana bread muffin recipe because my kids love it. But you could also use Orange Cranberry Muffins, or Cherry Oatmeal Muffins. Make them gluten free with our Lemon Gluten Free Muffins. Any muffin will be fun just make sure it is completely cooled before decorating.
Groundhog Day Banana Bread Muffins
To make the muffins in to chubby groundhogs you will need:
- Whole almonds or banana chips (2 for each muffin)
- Chocolate chip morsels (1 for each muffin), plus about 1 tablespoon melted
- Small candy eyes (2 for each muffin)
- Fudge-covered Mini Oreos (2 for each muffin)
- Miniature marshmallows (2 for each muffin)
Press the pointed end of an almond into the muffin to resemble a small ear. Repeat to create a second ear.
In the middle of the muffin, line up two fudge-covered mini Oreo cookies to be the groundhog’s cheeks.
To attach the miniature marshmallows for the teeth, melt 1 tablespoon chocolate morsels and use a toothpick to apply a small amount of chocolate to each marshmallow. Press the marshmallow against the muffin below the “cheeks” using the chocolate as glue.
Press a chocolate morsel of the top where the Oreos meet to serve as the nose.
Above the nose, place a candy eye on each side.
Enjoy your groundhog muffins and hopefully winter will be over soon.
Groundhog Banana Nut Muffins
Make homemade banana bread muffins in to adorable groundhogs for Groundhog Day on February 2nd.
Ingredients
- For the muffins:
- 1 ½ cup unbleached all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 3 ripe bananas, peeled and mashed
- ¾ cup butter, melted and cooled slightly
- 1 egg
- 1 teaspoon vanilla
- For decorating:
- Whole almonds or banana chips (2 for each muffin)
- Chocolate chip morsels (1 for each muffin), plus about 1 tablespoon melted
- Small candy eyes (2 for each muffin)
- Fudge-covered Mini Oreos (2 for each muffin)
- Miniature marshmallows (2 for each muffin)
Instructions
For baking:
1. Preheat oven to 350 degrees. Prepare a 12 cup muffin tin with cupcake liners. Spritz with non-stick cooking spray.
2. In a large mixing bowl, whisk together the flour, baking soda, baking powder, and salt. Create a well in the center.
3. In a separate bowl, whisk together the bananas, melted butter, and vanilla. Add the egg and whisk until well blended.
4. Pour the banana mixture into the well of the dry ingredients. Stir just until combined.
5. Using an ice cream scoop, divide the batter among the 12 cupcake liners.
6. Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Allow muffins to cool completely before decorating.
For decorating:
