Nothing says comfort food like a grilled cheese sandwich. What’s better than cheese melted between two slices of bread? Learning how to make a grilled cheese sandwich was a rite of passage in my family growing up. Yellow American cheese product sandwiched between two slices of white bread, slathered in butter and grilled. Served with a side of tomato soup, a grilled cheese sandwich was the stuff of lunch in the 80’s. I still love a good grilled cheese, but I like a more “grown up” version with a hearty bread, buttery cheese, and a few other flavors to round it out.
I just recently discovered Havarti cheese. It has a rich, buttery taste that I like cold with salami, or melted on a sandwich. Years ago a college roommate introduced me to an open faced tomato sandwich with Dijon mustard and topped with cheese. It was one of my favorite cheap meals when I was just out of college. I knew it would make a fabulous grilled cheese sandwich recipe. I already had the Havarti cheese. I picked up this grainy Eureka bread for a more grown up sandwich.
Making the grilled cheese sandwich is super easy and the Dijon adds such a great flavor. Just spread the mustard on one side of the bread.
Top with tomato slices. I prefer Roma tomatoes and I’m not a huge tomato fan so I just used a few slices. But feel free to pile them on.
Finally the Havarti cheese. It reminds be a bit of Swiss cheese with the holes and it’s mild flavor.
