As if packing lunches for kids isn't hard enough, I need easy lunch ideas for my husband, too!  As part of a sponsored post with Collective Bias, this school year we're trying out Velveeta Cheesy Skillet Singles for my man on the go.

It's back to school time and while most moms are preparing to send kids back to school,  in our home, I also am prepping to send my husband back to work.

My husband is a high school band director – and a trumpet player. His schedule is crazy.  He teaches in school all day and then at least 2-3 times a week he also has after school and evening commitments for marching and pep band.  He not only needs a lunch every day he often also needs dinner packed.

I have struggled for years with making sure my husband has enough food to keep him full while also making sure he can heat and eat the food in under 30 minutes.  He often spends his lunch and dinner time working with students instead of eating – despite my pleas for him to please just eat!

It's time for full confession: I'm terrible, terrible at packing my husband's lunches!  Or even just providing the food to be packed.  They poor guy often goes to work with a measly little lunch.  I try so hard to make enough dinner the night before to have leftovers for lunch the next day for everyone.  I usually end up with way too much (which I freeze for later) or not nearly enough.  If I do have leftovers, I put them in hubby's lunch kit right after dinner so they are ready to go the next morning.  But you can see how pathetic the leftovers often are – a sad little peach and not nearly enough food to fill up a hungry man.

Sandwiches are another of my easy lunch options.  Hubby doesn't mind a sandwich and chips every once in a while, but I'd need to pack a foot long sub to fill his tummy with a sandwich.  I'm also terrible about buying lunch meat so more often than not his sandwich is homemade peanut butter and jelly. Not exactly enough to keep a grown man full!

This year I'm calling in back ups! We're starting the year off with Velveeta Skillet Singles. Since he's a band director, my husband actually started band camp two weeks prior to school starting.  Camp is a good test run for our new lunch plan.

Despite the fact that we don't have a microwave at home, my husband has one at work and I definitely should be using  that more to my advantage when packing his lunch.  He's a pretty decent cook so I was sure he'd be able to handle these eat and heat directions. I was right! He really likes how easy and quick the Velveeta Cheesy Skillet Singles are to make in his microwave at school.  He said he actually had time to eat the entire meal and he enjoyed the meals, too.

The real test for me is – will they fit in his lunch bag?  Yes! I can fit two in comfortable and there is still room for a banana or apple.  We will definitely be keeping Velveeta Cheesy Skillets Singles on hand for lunches this school year.   Be on the lookout for them in your stores and check out my shopping trip for easy lunches in my Google+ album!

  5. I was giggling at the first lunches you showed because I have…uhum uhum…created some of those myself. I love how easy the Mac and Cheesy is to fit in the lunch box! I will definitely try them for my sons lunch on days when I don’t feel so up to making the full shebang. He has a microwave at school! Great pics and great post!
