Celebrate every day occasions with this easy to make mini cake for 2!

If you’d asked me in early June what we had planned for this summer, I would have told you “not much.”  June itself was pretty uneventful but July and August turned into a whirlwind of activity.  We spent a lot of time traveling.  My kids went to visit my sister in Michigan for two and a half weeks while my husband and I stayed home – alone! It was an absolutely wonderful break.  We had a chance to reconnect as a couple and my kids had a ball enjoying a Michigan summer with family.  But when the kids returned, I wanted to do something a little special to welcome them back.

Duncan Hines new Perfect Size cake kits were the answer to my little welcome home celebration for the kids.  The kits come with a 6 inch baking pan, cake mix, and frosting mix.  All I needed to add was butter, water and an egg to make a mini cake perfect for a small family celebration.

The little cake was easy to whip up and I actually baked it in my toaster oven making it even easier.  The cake pan is disposable and doesn’t need to be greased before baking.

The frosting was amazing! I was a little concerned there wasn’t going to be enough, but there was exactly the perfect amount to frost our mini cake.

I served the cake on a little cake stand and added my own sprinkles to dress it up a bit.  I wasn’t sure we’d each get enough cake but we cut the cake into four slices and we each got a pretty decent sized piece of cake.

Duncan Hines Perfect Size cake kits come in 5 fun flavors and each kit includes the cake, a pan and frosting.  These would be so fun for the little events in life that you want to celebrate, but don’t need a full sized cake.

We just picked a couple of those up the other day. I baked one up, cut it into 8 slices, and served with tiny scoops of ice cream for a “little” snack. The kids were thrilled – they thought it was so cute. Perfect for impromptu tea parties this winter 🙂

I actually served mine between 4 of us and the pieces were very generous. You could definitely do 8 and get a tasty treat! I can’t wait to try the other flavors.
