Cook brown rice in your Instant Pot and then flavor with lime juice, lime zest, and cilantro for a classic flavor combination.
Cilantro lime rice has become a popular side dish in fast food burrito restaurants. It is super easy to make at home, especially when cooked in an Instant Pot. Making the rice with brown rice also adds a little bit of flavor and some extra whole grains. The brown rice cooked in the Instant pot is then mixed with lime, cilantro, and a little bit of garlic.

Cilantro Lime Instant Pot Brown Rice Recipe
Cilantro Lime Instant Pot Brown Rice Ingredients:
- Long-grain brown rice
- Chicken or vegetable broth – make your own homemade chicken broth
- Fresh lime juice
- Lime zest
- Fresh cilantro leaves
- Garlic powder
- Sea salt and black pepper
Instant Pot Brown Rice Directions:
Add rice and broth to your Instant Pot and stir to combine. You can use store-bought broth or make your own homemade chicken broth. If you don’t have broth, just use water.
Cover and lock the lid into place. Set the valve to “Sealing” which is in the middle of the lid.
Select the “Manual” and “High Pressure” settings on the front of the panel of the Instant Pot. Adjust the cooking time to 22 minutes. The Instant Pot will come to pressure and then cook for 22 minutes.
Once cook time is complete, allow pressure to release naturally for 10 minutes. Then use a wooden spoon to turn the sealing valve to either side to “venting” to release the rest of the pressure. Be careful when doing this as the Instant Pot is still hot and full of hot steam.
Remove lid and stir in lime juice, lime zest, cilantro, and garlic powder. Season with salt and black pepper, to taste, and stir to combine. If desired, allow flavors to combine for several minutes before serving.
Cilantro Lime Brown Rice
Ingredients
- 1 cup long-grain brown rice rinsed until water runs clear
- 1 1/4 cups chicken or vegetable broth
- 3 Tablespoons fresh lime juice
- 1 Tablespoon lime zest preferably organic
- 1/4 cup fresh cilantro leaves chopped
- 1 teaspoon garlic powder
- Sea salt and black pepper to taste
Instructions
- Add rice and broth to the Instant Pot and stir to combine.
- Cover and lock lid into place. Set the valve on the top of the lid to “Sealing."
- Select the “Manual” and “High Pressure” settings.
- Adjust cook time to 22 minutes. The Instant Pot will come to pressure and then cook for 22 minutes.
- Once cook time is complete, allow pressure to release naturally for 10 minutes.
- Then do a quick release by carefully turning the sealing valve to either side for any remaining pressure.
- Remove lid and stir in lime juice, lime zest, cilantro, and garlic powder. Season with salt and black pepper, to taste, and stir to combine.
- If desired, allow flavors to combine for several minutes before serving.
