Chocolate peanut butter cookie cups are filled with a fudge like peanut butter filling and then topped with a chocolate ganache.
These chocolate peanut butter cookie cups are made with 3 parts: the chocolate cookie cup, the peanut butter filling, and a chocolate ganache drizzle.
First start by making our chocolate peanut butter cookie cups recipe. We used these to also make Ice Cream Cookie Cups. The cups are really good. They are dense and have a little crunch but chewy center. They store really well. You can make them ahead of time and freeze them like you’d freeze cookies. Then just pull them out to defrost before you want to fill them.
Once the cookie cups are cool (or defrosted), make the peanut butter filling. The peanut butter filling is very thick. It’s almost like a fudge. The combination of the peanut butter filling and the cookie cups is amazing! It’s rich and tasty.
To make the peanut butter filling you will need:
- Creamy peanut butter
- Butter, softened
- Powdered sugar
- Vanilla extract
- Mini peanut butter cups, cut in half
Peanut Butter Filling Directions:
Add peanut butter, butter, powdered sugar and vanilla to a mixer and beat well. The filling will be stiff when it is finished.
Use a 1 tablespoon portion scoop to scoop the filling out. Scoop out the filling and then roll the filling into a ball between your palms.
Put 1 peanut butter filling ball in each chocolate cookie cup. Continue until they are all filled.
Once the cookie cups are all filled, gently press down on the peanut butter balls so that they fill the cup. Thus helps with a pretty presentation.
Chocolate Ganache Directions:
The chocolate ganache is entirely optional. But it does add a nice added touch of decoration and flavor to the cookie cups. Chocolate ganache is also a great recipe to learn to make. You can use it to frost cakes, as an ice cream topping, or to garnish desserts, like with the cookie cups.
Making chocolate ganache is super easy. To make the ganache you will need:
- Heavy whipping cream
- Semi-sweet chocolate pieces or a bar chopped up
To make the ganache, add whipping cream to a microwave safe bowl and microwave on high for 45 seconds or just until it begins to bubble. Place chocolate into cream and let set for five minutes. Stir until dissolved completely.
You can also make ganache on the stove top by heating up the heavy whipping cream and chocolate together in a small pan. Stir until all the chocolate is melted.
Let ganache cool for an additional 5 minutes before pouring into a resealable plastic bag. Seal the bag and snip the tip.
Drizzle ganache on cookie cups and top with a mini peanut butter cup. Let set for ganache to set and serve. You can store Chocolate Peanut Butter Cookie cups in an airtight container in the refrigerator.

- 4 ounces semi-sweet chocolate

Instructions
Peanut Butter Filling Directions:
- Add peanut butter, butter, powdered sugar and vanilla to a mixer and beat well. Filling will be stiff.

- Gently press down to fill the cup.
- Top with ganache and a mini peanut butter cup cut in half.
