Kids will love eating a pancake on a stick! Use your favorite pancake recipe for a great breakfast on the go or at home.
We eat a lot of pancakes around here. I have recipes for homemade pancake mix, apple pancakes, pumpkin pancakes, gingerbread pancakes and even red velvet pancakes that all make regular appearances at breakfast. But I saw these adorable pancake pops somewhere on the internet and was pretty sure my kids would love them.
You can use any pancake mix – homemade or boxed, you want. I actually made these with a store bought mix. I used a Pampered Chef cookie scoop – the middle sized one which I believe is about 2 Tablespoons. I cook pancakes on an Emeril cast iron griddle that lays over two burners on my gas stove. I use it so often that I just leave it on the stove all the time. I butter the griddle, and then put the pancake batter on. I used lollipop sticks I probably got at Jo-Ann. Place the stick in the middle of the pancake and push down just a little. You don’t want it to go all the way through. Then add chocolate chips – my kids love butterscotch chips, too. I flipped the pancakes over to the other side of the griddle when they were ready to flip.
