Most kids love meatballs. It’s pretty easy to use turkey instead of beef and still get them to eat the meatballs. Cheesy spinach turkey meatballs would be a kid’s worst nightmare for dinner. While these look a little spinach-heavy, they are not. We have served them to kids of all ages who ate them. They are more cheesy than spinach.
Cheesy Spinach Turkey Meatballs Ingredients:
- Ground turkey
- Frozen spinach
- Panko crumbs
- Ricotta cheese
- Shredded mozzarella cheese
- Egg
- Lemon zest
- Red pepper flakes
- Salt
Cheesy Spinach Turkey Meatballs Directions:
Preheat your broiler on high. If there is no low/high setting then preheat it. Line a rimmed baking sheet with foil and set it aside.
Place the spinach in 2 paper towels and squeeze out as much water as possible. Put the meat and spinach in a mixing bowl.
Add the egg, breadcrumbs, cheese, red pepper flakes, and salt to the bowl.
Zest a lemon right into the mixing bowl.
Use a spoon or your hands to mix the ingredients. Make sure that the meat is mixed thoroughly.
Form the meat mixture into 2-inch balls using your hands or a 2 tablespoon cookie scoop. The cookie scoop really helps keep the meatballs the same size. This helps to make for even cooking.
Place the meatballs on the foil-lined rimmed cookie sheet. You can put them pretty close together. They will shrink as they cook.
Broil meatballs for 10-13 minutes or until thoroughly cooked. Turn after 5 minutes to brown both sides. These took 13 minutes to cook but they may take longer depending on your oven. Watch closely to make sure they don’t burn.
Remove the meatballs from the baking sheet and serve. We like them with fettuccine alfredo and a side salad.
Cheesy Spinach Turkey Meatballs
Ingredients
- 1 lb ground turkey
- 1 cup thawed frozen spinach
- 1/2 cup panko crumbs
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1 egg
- 3/4 teaspoon lemon zest
- 3/4 teaspoon red pepper flakes
- 3/4 teaspoon kosher salt
Instructions
- Place the spinach in 2 paper towels and squeeze out the water.
- Line a rimmed baking sheet with foil and set it aside.
- Preheat broiler.
- Place all ingredients in a large mixing bowl.
- Use your hands to mix the ingredients together.
- Form the meat mixture into 2-inch balls using your hands or a cookie scoop.
- Place the meatballs on the rimmed cookie sheet as you create the meatballs.
- Broil in the oven for 8-10 minutes or until the meatballs are cooked.
