Salads are fabulous meals especially in the summer. Salads as dinner take advantage of all the yummy summer produce and you don’t have to turn on the stove. Salads are also great for using up leftover veggies, meat, cheese, etc. This salad is awesome with leftover barbecued chicken.
Chopped BBQ Chicken Salad Recipe
The foundation of every salad is a good lettuce. You can use romaine for this salad, a mix of romaine or even ice berg. You can tear the lettuce into pieces or make it a chopped salad. To make this a chopped salad, just use a knife to chop the lettuce up in to small pieces. Chopped salads are a little easier to eat because of the small pieces and are great for kids.
Next, I layer in corn, tomatoes, black beans, and green onions. Make sure to drain and rinse the corn and black beans first. Bell peppers would be great in here, too. The salad definitely has a Southwestern flavor. Toss the salad together.
For the final layer, put chopped barbecue chicken breasts, shredded cheese, and fried onions on top of the salad. Don’t skip the onions. They make the salad. You could also use croutons or caramelized onions.
See how pretty it is in the bowl! The heavier ingredients tend to fall to the bottom but you can still see them through the glass. Love it!

Ingredients
- 2 heads romaine salad, chopped
- 2 Roma tomatoes, chopped
- 2 green onions, chopped
- 1 15 ounce can corn, drained and rinsed
- 1 15 ounce can black beans, drained and rinsed
- 1 cup shredded colby jack cheese
- French's fried onions
- Salad dressing of choice
Instructions
- Combine salad, tomatoes, onions, corn, and beans in a large bowl. Toss to mix.
- Add chicken, cheese and onions on top of salad.
- Serve with salad dressing.
- This can be made ahead of time and refrigerated until ready to serve.
