I love making salads as meals in the summer. Salads as dinner take advantage of all the yummy summer produce and I don’t have to turn on my stove. Salads are also great for using up leftovers. This salad is awesome with leftover barbecued chicken. I first had a version of this salad last summer at a restaurant and I kept meaning to make it at home. A year later, I finally did it and it is as delicious as I remember.
This BBQ chicken salad recipe is very colorful so it’s fun to serve it in a glass bowl where you can see all the colors. I love my Luigi Bormioli bowl from the Michaelangelo collection. The foundation of every salad is the lettuce. I used all romaine for this salad, but I prefer a mix of romaine and ice berg. I prefer chopped salads so I use a knife to chop my lettuce up in to small pieces.
Next, I layered in corn, tomatoes, black beans, and green peppers. Bell peppers would be great in here, too. The salad definitely has a Southwestern flavor. Toss together.
For the final layer, I put in chopped barbecue chicken breasts, shredded cheese, and fried onions. Don’t skip the onions. They make the salad.
See how pretty it is in the bowl! The heavier ingredients tend to fall to the bottom but you can still see them through the glass. Love it!
I served the salad with two different salad dressings since we are a family divided when it comes to dressings. My husband used a homemade Italian dressing. I prefer ranch dressing so I bought a jar and mixed it with a little barbecue sauce to make a barbecue ranch salad dressing and it was amazing.

- 2 heads romaine salad, chopped
- 2 Roma tomatoes, chopped
- 2 green onions, chopped
- 1 15 ounce can corn, drained and rinsed
- 1 15 ounce can black beans, drained and rinsed
- 1 cup shredded colby jack cheese
- French's fried onions
- Salad dressing of choice
- Combine salad, tomatoes, onions, corn, and beans in a large bowl. Toss to mix.
- Add chicken, cheese and onions on top of salad.
- Serve with salad dressing.
- This can be made ahead of time and refrigerated until ready to serve.
