Bananas are one of my favorite fruits. When my son was a toddler, there were also his favorite fruit and we’d go through literally 9 pounds of bananas a week! It was crazy. One of my favorite desserts is also banana pudding. I’ll find myself craving banana pudding but not have the ingredients, or the energy to make it. But now I have an easy and fun way to make banana “pudding” – with ice cream.

The base of the banana pudding is a scoop of Breyers Natural Vanilla Ice Cream. Slices of banana are sprinkled with sugar and then sauteed in butter. Top the ice cream with the bananas and add in vanilla wafer cookies for final touch.

Banana "Pudding" Parfait Recipe
Ingredients
- 1/2 large ripe banana, cut into 4 equal pieces
- 1 Tablespoon turbinado sugar
- 1 teaspoon spreadable butter
- 1 cup Breyers® Natural Vanilla Ice Cream
- 4 vanilla wafer cookies
Instructions
- Put banana pieces on a baking sheet and sprinkle flat sides with turbinado sugar. Melt butter in a small nonstick skillet and sauté bananas.
- To assemble each, scoop Breyers® Natural Vanilla Ice Cream into a small wide rimmed glass. Then wedge 2 cookies on either side and top with sautéed bananas.
