Weekly Menu, May 14

Phew! What a weekend!  We made a quick trip to Six Flags Magic Mountain in California with my parents and my husband’s high school band.  It was fun and crazy.  Nothing like 12 hours in a car for 4 hours at an amusement park.  We made it back in time to celebrate Mother’s Day with my mom.  She and my dad are heading back to Michigan today so it’s a sad day around here.

This week is much saner than last.  I had a hard time sticking to my menu because our dinner times were just all over the place.  But I did mostly keep with it and was happy that I did.  I am changing up the menu this week because I have an abundance of chicken in the freezer that I want to use up.

Monday: Salmon on the grill, green beans, rice

Tuesday: Chinese chicken salad

Wednesday: Pasta with bolognese, salad or green beans

Thursday: Barbecue chicken sliders (I WILL get to this recipe!), veggie

Friday: Band banquet (pot luck! I better decide what to make)
