This is my favorite dinner roll recipe and I've been making it for years.  The rolls are light and buttery and a perfect addition to any meal. I've tried freezing the rolls and then baking later, but I've never had good luck getting the rolls to rise after they've been frozen. Peanut Butter Cupcakes with Mocha Frosting

These cupcakes are quick, easy and fun treat made up of a classic flavor combination.  Whenever my kids want to bake, we whip these up because they are perfect for little helpers.   I get 12 cupcakes out this recipe, but it could be stretched to 18 if you fill the cups with less batter. Lemon Yogurt Cake

Lemon is such a nice Spring flavor so when a friend gave me some Meyer lemons from her mother's tree, I knew I had to make this cake recipe that I'd pinned.    This is a triple layer lemony dessert.  First there is lemon zest in the cake batter.  Then, you pour a simple syrup of lemon juice and sugar over the warm, baked caked and finally, you glaze the loaf with a lemon glaze. If you don't have vanilla yogurt, you can use plain yogurt and add some vanilla extract to the cake batter.  I baked this for about 35 minutes and it was overdone so I'd start checking it around 25 minutes or so, but it could take up to 50 minutes or more depending on your oven and loaf pan. And if you use white sugar instead of brown sucanat like I did, I'm pretty sure your cake will be a nice Springy yellow perfect for Easter or Mother's Day. Fried chicken is one of those things I put off making because I just figured it was too much of a hassle for a mediocre result. I was totally wrong.   Aside from having to plan ahead, this recipe is easy and mouth watering delicious. In order to move things along, I fried the chicken in two cast iron pans (one small and one large) at the same time.  The chicken really needs to sit in the oil and cook so you can easily manage two pans at once.   I used only chicken thighs and legs since they are smaller pieces and cook faster. Argentine Beef Skewers with Chimichurri Sauce

As the temperatures begin to warm up, I start thinking about not heating up my kitchen (and thus my house).  We intentionally grill a lot of our food during the summer and this is one of my favorite grilling recipes!  The beef and sauce are full of flavor. You could definitely serve this with rice or pasta, but I served it with roasted asparagus and fingerling potato skewers. The original recipe calls for tenderloin, but I used sirloin. Use whatever steak you have or find at a great price. I forgot to snap a photo of the chimichurri sauce. Every picture I've ever seen of chimichurri sauce, the sauce is green, but this turned out clear like a vinaigrette. Growing up, one of our holiday dishes was my mom's broccoli casserole. The casserole only made an appearance once a year at our Thanksgiving meal. I assumed my mom avoided it because it was difficult to make. Then she sent me the recipe: frozen broccoli, a can of this, a can of that and Velveeta cheese. Nope, not bad at all! Of course, I don't really do "canned" anything so I "fixed" it.  I decided to leave in the Velveeta cheese. After thirty plus years of eating this casserole, I have definite opinions as to how it should taste and part of that expectation is Velveeta cheese.   Surprisingly, the ingredient list on Velveeta cheese isn't nearly as bad as I expected, either. This recipe was my first attempt at a beef curry.  We love chicken curry, but I was ready to try something new.   So I left the recipe with my husband and took my kids on a play date!  I looked over the recipe, penciled in the changes I wanted to make and left everything he needed to make it on the counter.  It turned out wonderfully! This is definitely a recipe any cook can learn. Before I started making curry dishes, I was concerned that the meals would be too spicy.  But curry comes in my flavors and heats.  For my dishes I use a powdered mild curry mixture that I buy from Frontier.  The curry has a wonderfully robust flavor, but it is not spicy at all.  My three year old not only inhaled his entire meal at dinner, he ate the curry again for lunch the next day. We did not make the recipe using potatoes, but they are common in curry dishes.  Sweet potatoes would work, too. Homemade Irish Cream

Irish cream is super easy to make. I looked at a lot of recipes and they are all virtually the same. Most call for whiskey, but I opted for vodka because that's what I have on hand. You can make your own sweetened condensed milk, but I had a can of evaporated milk I wanted to use up. So I dissolved 1/2 cup sugar in the evaporated milk and called it good. I only used 1 cup of vodka because I don't really like the taste of alcohol in general, but you can use up to 2 cups or just leave out the alcohol for a stellar flavored coffee creamer.  As for the raw eggs, I'm not afraid of them because I know my farmer.  I also think that the alcohol in this would effectively kill any gross stuff. The eggs act as a thickener, I think, so you could also leave them out and get a thinner result. I have a serious love of anything and everything "Buffalo" flavored. Last week my mom and I decided to break out the deep fryer we'd scored at a yard sale in the Fall to make our own Buffalo wings.  We needed a sauce that wasn't too spicy (we have some serious wimps in the family).  I whipped this up and it was a hit. I would say this is on a mild Buffalo sauce. If you want it spicier, I'd add Tabasco or more Frank's to it, a little at a time until you get the right amount of heat.
