Beer Can Chicken

Beer Can Chicken

Beer can chicken is our favorite way to cook chicken on the grill. Every time we use this recipe to cook a whole chicken,  it turns out moist and delicious. I always hope to have leftovers, but we rarely do! Living in Las Vegas we are lucky enough to be able to use our outdoor grill year round.  One of my favorite foods to cook on the grill, though, is Beer Can Chicken.  The skin comes out crisp on all sides  and the meat is perfectly moist. Don't let the "beer" can part fool you! You can use any kind of liquid you'd like - wine, water, soda, chicken broth, etc. In a small bowl, make your rub.  We use olive oil and spices, but any oil or even melted butter will work.  We generally use the same spices, but feel free to use your favorites. Even just salt and pepper alone results in a delicious grilled chicken. Prepare your chicken by removing all the innards.  Wash and pat dry, if you want.  Place the chicken on a platter. The best way to get flavor ... [read more]

Slow Cooker Chex Mix

Slow Cooker Chex Mix

Slow Cooker Chex Mix is a favorite holiday treat in my home!  This recipe helps you make homemade Chex Mix right in your slow cooker.  Just melt the butter right in the crock and then mix in the seasonings.   Add the cereal and any other munchies you like and stir to coat.  Two hours later, you will have a delicious savory snack that the whole family loves. Chex Mix has been a Christmas tradition in my family for as long as I can remember.  My mother would make a 5 gallon container full of the stuff and we would wipe it out.   When I moved away from home, I would beg her to send me Chex Mix because I never wanted to tackle making it myself.  I hate recipes that require you to stir while baking. Weird, I know!  So when I saw that you could make Slow Cooker Chex Mix a few years ago I knew that my Chex Mix avoidance was over. The ingredients for Slow Cooker Chex Mix are pretty flexible.  Adjust the amount of butter and the seasoning to your liking.  I sometimes add ... [read more]

Chocolate Mint Brownies

Chocolate Mint Brownies

Chocolate mint brownies are a decadent treat anytime of year, but I particularly love them during the holiday season.  A layer of cake brownies is topped with a mint cream layer.  After a brief chill in the refrigerator, the entire dessert is covered in chocolate for a truly delicious dessert. Chocolate and mint is one of those classic combinations that is always a big hit.  Well, unless your husband doesn't like mint and then you have to eat the entire pan yourself. Yeah, it's tough.  Chocolate mint brownies are my classic holiday treat and I pretty much only make one pan a year around Christmas.  This dessert is super decadent a small piece goes a long way so go ahead and cut this in to a lot of tiny pieces to make it go a long way. There are a few steps involved in this recipe, but nothing hard.  Just plan ahead to allow time for the brownie layer to cool and chilling the other layers in the fridge.   You can make the mint cream filling while the brownies are baking and ... Party Dip Recipe: Mexican Corn Dip

A good party dip recipe that is quick and easy is nice to have in your cooking repertoire. Mexican Corn Dip is one of the best party dips I've ever eaten or made. This party dip recipe is easy to make, as you will see in the video, and I've had total strangers ask for the recipe. In fact, this party dip is so popular in our group of friends that I usually have to coordinate with other friends as to who is bringing it to parties or pot lucks! I like to have a selection of interesting party dip recipes to choose from to take to holiday or family gatherings. If I'm in a healthy mood I might choose a roasted eggplant dip.  Or I might make a simple veggie dip with some sour cream and a homemade onion soup mix. Sometimes, though, you just want a party dip that will wow the crowd and Mexican Corn Dip is that recipe for me. Mexican Corn Dip is a party dip recipe that I stole from my very good friend, Kim.  Every single time I have been at a party where this party dip is served, ... [read more]
