homemade ice cream

Homemade ice cream is one of summer's finest treats. It's also a great way to keep the kids cool and busy on a hot summer afternoon. A few simple ingredients are churned by the kids in plastic freezer bags creating a delicious homemade ice cream in a bag ready to eat on the spot!   Welcome to another week of Summer Day Camp! This week it's my turn to share a fun kid-friendly recipe - homemade ice cream in a bag. My kids love making their own ice cream and then eating it right out of the bag. You only need a few basic ingredients to make the ice cream - heavy cream, vanilla extract, ice cubes and rock salt.  You will also need 1 large plastic storage bag and 1 small plastic storage bag for each kid.  You could also do 1 bag for every 2 kids because the bags get cold so taking turns helps little hands stay warm. I let the kids mix up the ice cream mixture in a large bowl.   The recipe below makes one serving so double, triple, quadruple to as much as you need. ... [read more]

Egg Cream

An egg cream is a delightful dessert beverage that is made even more fun when you serve it in a jar!  A combination of chocolate sauce, milk, and seltzer water area mixed together in a jar making a chocolate egg cream a refreshingly sweet end to any meal! I had never heard of an egg cream until about 10 years ago when I met my husband.  He actually isn't a fan of egg creams, but his parents would talk about them all the time and I was fascinated by this drink, particularly the egg part.  As it turns out, there are no eggs in an egg cream.  An egg cream is basically a an ice cream soda without the ice cream.   Now, I happen to be a huge fan of chocolate sodas so I knew I'd love a chocolate egg creams! This week's Sunday Supper is all about desserts in jars as inspired by the cookbook Desserts in Jars by Shaina Olmanson.  In the book Olmanson only has one beverage type dessert, an affogato, which immediately made me think of an egg cream.  I've pretty much decided that anything ... Chocolate Gelato

Chocolate gelato is a fun alternative to chocolate ice cream.  If you need to avoid dairy, this dairy free chocolate gelato is a great alternative.   Just a few simple ingredients and some time in the freezer results in a super rich and delectable dessert. When I saw that this week's Sunday Supper was all about "Free" recipes, I almost decided to skip it.  We are very fortunate to be food allergy free in our home so I don't have many recipes without sensitive ingredients.  Then I remembered this chocolate gelato recipe I made a few years ago.  The recipe really threw me for a loop because aside from some chopped up chocolate, it didn't contain any other dairy.  With this week's "Free for All" theme, I decided to go ahead and make this recipe completely dairy free. I originally used chopped up milk chocolate for this gelato.  This time I substituted dairy free mini chocolate chips for the regular milk chocolate.  I used Enjoy Life mini chocolate chips that are dairy, nut and ... Frozen Pretzel and Strawberry Dessert #FreshNFruti

Strawberry desserts are perfect for summer barbecues and potlucks.  Strawberry Fruti Bars are blended with cream cheese and whipped cream and then layered over a pretzel crust.  After few hours in the freezer,  you have a refreshing pretzel and strawberry dessert. One of my favorite potluck desserts of all time is strawberry gelatin layered on top of a whipped cream mixture on top of a pretzel crust. I love the mix of salty and sweet.  So when Fruti Bars asked me to create a summertime cookout dessert with their Chunks O' Fruti  Bars, I decided to use their Strawberry and Strawberry Cream bars to make a frozen version of the pretzel and strawberry dessert. I purchased the Fruti Chunks O' Fruit bars at Sam's Club. Check out more about my shopping trip in my Google+ album!  It's always a chore to find freezer space for those large boxes from Sam's, but Fruti Bars helped me out - the 4 individual boxes fit perfectly in my freezer. Fruti Bars are all natural - no high ... [read more]

Pastel Pizzelles

Pastel Pizzelles

Pizzelles are one of my favorite cookies.  Light and delicate, pizelles are the perfect shower food for a baby shower or bridal shower.  The simple addition of color personalizes the pizzelles to match the baby's gender or the bride's colors. I have been debating the purchase of a pizelle maker for years. The problem is that I tend to be a kitchen gadget junkie. I try to only buy a kitchen gadget that can be used for at least two different purposes.  My friend offered to let me borrow hers so I could play around with it.  I ordered my own pizelle maker about an hour after making my first batch! I didn't want to just make plain, boring pizelles so I decided to add some color.  After making the batter, I divided it up and added food dye.  I ended up with pink, purple, and yellow for some fun spring colors.  I never quite got the amount of batter exactly right in the pizzelle maker.  I always just a little too much or a tad too little, but with more practice, I know I'll ...
