Chocolate Mint Brownies

Chocolate mint brownies are a decadent treat anytime of year, but I particularly love them during the holiday season.  A layer of cake brownies is topped with a mint cream layer.  After a brief chill in the refrigerator, the entire dessert is covered in chocolate for a truly delicious dessert. Chocolate and mint is one of those classic combinations that is always a big hit.  Well, unless your husband doesn't like mint and then you have to eat the entire pan yourself. Yeah, it's tough.  Chocolate mint brownies are my classic holiday treat and I pretty much only make one pan a year around Christmas.  This dessert is super decadent a small piece goes a long way so go ahead and cut this in to a lot of tiny pieces to make it go a long way. I've been playing around with smoothies lately.  They seem like they should be so easy to make, but I am super picky about how they turn out.  I'm learning the ins and outs of getting the perfect texture and taste. In the summer I have a lot of over ripe bananas because they turn so quickly in the warm weather.  I peel them first and then freeze them and use as needed for smoothies. This one is a favorite of the kids.  They think they're chocolate shakes.  Freeze any leftovers in a Popsicle tray and have homemade healthy frozen treats! Homemade Monkey Bread from Scratch

I love monkey bread, but I don't love bread dough from a can.  After many attempts, I finally managed to nail down a homemade monkey bread that is made entirely from scratch  - no tubes or cans!  This is easy and the kids love to help make it. I really enjoy a good monkey bread, but I really don't like my bread products to come from a tube.  So homemade monkey bread was on my "to make" list for years.  The problem I ran in to was that most of the homemade monkey bread recipes I found required yeast and thus rising time. I wanted a recipe that was as quick and easy as using tubed biscuit dough.  After many failed attempts, I finally got it right! A note about the buttermilk - you can use yogurt in lieu of the buttermilk.  Just thin it out a bit by adding some milk.  I used about a cup of vanilla yogurt once and added a 1/4 cup of milk to thin it a tad and worked great! I made my first pineapple upside down cake almost ten years ago because my new husband told me he liked them. I used a boxed cake mix and canned pineapple.  The cake was fine, but nothing really special so I never bothered to make one again.   This weekend, however, I had two very ripe pineapples that needed eating and I thought I'd try pineapple upside down cake again only this time from scratch. Wow. What a difference! This cake is decadent.  It is crazy good and I'd serve it to guests.  What it lacks in looks in definitely made up for in taste! I made the cake on a Sunday afternoon thinking it'd be a quick project. It was quick, but it also used at least 3 different bowls. Lemon Yogurt Cake

Lemon is such a nice Spring flavor so when a friend gave me some Meyer lemons from her mother's tree, I knew I had to make this cake recipe that I'd pinned.    This is a triple layer lemony dessert.  First there is lemon zest in the cake batter.  Then, you pour a simple syrup of lemon juice and sugar over the warm, baked caked and finally, you glaze the loaf with a lemon glaze. If you don't have vanilla yogurt, you can use plain yogurt and add some vanilla extract to the cake batter.  I baked this for about 35 minutes and it was overdone so I'd start checking it around 25 minutes or so, but it could take up to 50 minutes or more depending on your oven and loaf pan. And if you use white sugar instead of brown sucanat like I did, I'm pretty sure your cake will be a nice Springy yellow perfect for Easter or Mother's Day.
