Cucumbers are some of my favorite summer side dishes.  They are so inexpensive all summer long that it's hard to pass them up at the farmer's market.  Cukes are also very refreshing as a cold side dish on a hot summer evening.  For years I've been making a cucumber salad with sour cream, but it's not a favorite of my husband.   So I decided to play around with a vinaigrette style dressing to see how that would go over.  My husband ate three servings so I'd say it was a hit. There are no exact measurements.  Just use as much or little as you'd like to taste and experiment with other types of vinegar and oils to change up the taste. Simple Cucumber Salad   Save Print   Ingredients 2 cucumbers White wine vinegar Salt Olive oil Pepper Instructions Cut cumbers in half and use a spoon to scoop out the seeds.
