Apple Pancakes

Apple Pancakes

The poor apple.  We only really focus on the apple in the Fall, but really, you can get decent apples in to winter.   I had some apples and applesauce in the fridge that need to be used up -- Pinterest to the rescue!  These pancakes are so delicious.   We ate them with maple syrup, but I'm thinking some apples sauteed in butter would be great, too.   Apple Pancakes Print Prep time: 10 mins Cook time: 15 mins Total time: 25 mins Serves: 12 pancakes Ingredients 1 1/4 cup all purpose flour 2 Tablespoons brown sugar 2 teaspoons baking powder 1/4 teaspoon salt 1 teaspoon ground cinnamon 1 cup milk 1/2 cup applesauce 1 apple, peeled and chopped 1 egg 2 Tablespoons oil or melted butter Instructions Whisk together flour, salt, cinnamon, sugar and baking powder in a medium sized bowl. In a separate bowl, whisk together milk, egg, applesauce and oil or melted butter. Pour the wet ingredients into the dry … [Read more...]

Cream Biscuits

biscuits

Have any heavy cream leftover  from making some homemade truffles?  This is biscuit recipe is a great way to use up some leftover heavy cream, but it's also a great reason to buy heavy cream if you don't have any.  This recipe is hands down the easiest and best way to get light, fluffy biscuits.  And any biscuit recipe that doesn't require cutting in butter is a winner in my book.   Cream Biscuits Print Prep time: 10 mins Cook time: 15 mins Total time: 25 mins Serves: 12 Ingredients 2 cups all-purpose flour 1 teaspoon salt 1 Tablespoon baking powder 2 teaspoons sugar 1 to 1 1/2 cups heavy cream 1/3 cup (5 1/3 Tablespoons) butter, melted Instructions Preheat oven to 425 degrees. Combine dry ingredients in a bowl. Whisk to incorporate together. While stirring constantly, slowly add in 1 cup cream. Use hands to form mixture in to a dough and add more cream if necessary to form a dough. Knead for 1 minute. Pat dough … [Read more...]

Mini-Cinnamon Rolls

OLYMPUS DIGITAL CAMERA

There are those mornings when all I want is a cinnamon roll. Now.  I don't want to wait the 2-3 hours of rising and baking that a "normal" yeast roll would take.  These little guys are perfect for a quick cinnamon roll fix.  They are actually more biscuit rolls than true yeast cinnamon rolls, but they do in a pinch.  Plus they are "mini", which means they make a great breakfast side dish. German Oven Pancakes

oven pancake pan

I have been making German Oven Pancakes for years. I've tried two different recipes, both of which were fine, but had their issues. This recipe, however, was perfect. The batter puffed up nicely and we had plenty to eat. In fact, we had leftovers, which never happens with German Oven Pancakes around here. I tripled the recipe below and baked 2/3 of the batter in a 9x13 pan and 1/3 in a cast iron skillet.   I almost always have issues with the pancakes sticking and this recipe was no exception, but the pancakes didn't stick quite as badly. I have no idea why the pancakes stick. I've tried every suggestion under the sun to get them not to stick but so far nothing has worked. So just be prepared for a little sticking. I have no idea why the eggs need to be at room temperature since you mix them with COLD milk. But I did warm them up a bit by placing them in a bowl with some tepid water. The traditional way to serve these is with a squirt of lemon juice and a … [Read more...]

Baked French Toast with Streusel Topping

OLYMPUS DIGITAL CAMERA

This is the recipe I made for our Christmas breakfast this year.  I've made several baked French toast recipes, but none of them have been this easy and this delicious! But this recipe is from Pioneer Woman, and she never, ever dissapoints!  I used a Challah bread that I had in the freezer and it really kicked this up a notch.  There is plenty of sugar in the recipe already so I did not serve it with any syrup.  We ate this for two days and it warmed up beautifully in the toaster oven. I'm guessing it would freeze and re-heat really well. Baked French Toast with Streusel Topping Print Recipe type: Breakfast Author: Ree Drummond, The Pioneer Woman Prep time: 15 mins Cook time: 1 hour Total time: 1 hour 15 mins Serves: 8 Ingredients 1 loaf Challah, sourdough, French bread 8 whole eggs 2 cups whole milk 1/2 cup heavy whipping cream 3/4 cups sugar 2 Tablespoons vanilla extract Topping 1/2 cup all-purpose flour 1/2 cup Sucanat or brown … [Read more...]

Hoe Cake

OLYMPUS DIGITAL CAMERA

I'm not sure how I ever survived without Hoe Cake.  It is my go-to super quick breakfast bread as it is basically a very large biscuit. It takes way less time than rolling and cutting biscuits so it's great for a large crowd, too.  I use it for biscuits and gravy as well as the bread for dipping over easy eggs. It's a fabulous addition to the morning routine. Southern Plate, the blog where I found the Hoe Cake recipe, prefers if I just link over to her so I won't put the full recipe here, but I did want to share because I absolutely love Hoe Cake!  When I make the recipe, however, I change it up a bit. First, I use either cold butter or organic palm shortening instead of "vegetable shortening".  This is just my personal, whole foods, preference.  Second, I never use self-rising flour -- I just follow here directions for making your own by adding baking powder and salt to the flour.  Third, I use either coconut oil, butter, grapeseed oil or bacon grease in the … [Read more...]

Christmas Breakfast Ideas

Red Velvet Pancakes

I have spent the past 5 years trying to figure out how to have fresh, homemade cinnamon rolls on Christmas morning.  As a kid, we ate the cinnamon rolls out of the tube, which, frankly, is much more convenient even if less appetizing.  Every single recipe I have for cinnamon rolls takes a good two hours to make with all the rising.  I've tried refrigerating overnight to rise, but that never seems to work.  I could get up at 3 AM to start them, but I don't want the rolls THAT much!  This dilemma may be the bane of my Christmas existence for the rest of my life. I'm OK with that, though, because I have a lot of other really yummy options for Christmas breakfast!    They are a festive red and oh so delicious! Super simple and quick! You can't beat these especially with some whipped cream. Any scone would be quick, easy and tasty, but these are over the top making them perfect for Christmas. All the tastes of Christmas packed in to a … [Read more...]

Glazed Cinnamon Scones

OLYMPUS DIGITAL CAMERA

I have made more than my fair share of scones in the past few years.  Most scone recipes require the same basic techniques and ingredients and they are quite simple and quick to make.  These glazed cinnamon scones, however, are just amazing!  I couldn't believe how tender and flaky they are.  I'm not really sure why they turned out so much better than other recipes because they use the same basic ingredients and techniques.  Maybe it was the chilly weather the day I made them or the fact that I haven't had a scone in a while. Either way, these babies are top notch! Glazed Cinnamon Scones 5.0 from 1 reviews Print Recipe type: Breakfast Author: Adapted from Money Saving Mom Blog Prep time: 10 mins Cook time: 10 mins Total time: 20 mins Serves: 8 Ingredients 2 cups flour 2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup (1 stick) butter 1 egg, separated 3 Tablespoons honey 1/3 cup buttermilk Topping: 1 … [Read more...]

Red Velvet Pancakes

OLYMPUS DIGITAL CAMERA

My kids really love pancakes so we eat them quite often for breakfast.  I used to really enjoy pancakes, but since they've become a regular breakfast item, I've grown rather bored with them.  I am always looking for a new and unusual pancake recipe just to change things up. Red velvet pancakes had me at "hello"!  I was so hoping that these would be good because I really need a new pancake to love.  These pancakes were so good that I happily ate them for breakfast two days in a row.  If you love red velvet anything, these will not disappoint! I used a new all natural red food dye so my red wasn't deep (they were more dark pink) and they really weren't red after cooking, but that's OK because they tasted AWESOME!  My daughter asked if next time we could make them blue... blue velvet.... tee hee. I suggest turning your griddle down pretty low and letting this cook slowly. The batter is thick and they burn quickly because of the sugar.  After the first couple of batches I … [Read more...]

Buttermilk Syrup

OLYMPUS DIGITAL CAMERA

I am not a huge fan of maple syrup.  I discovered grade B maple syrup a year ago and that helped a bit, but in general, I think maple syrup ruins a good pancake.  I finally realized that I could actually make my own syrups of all kinds of different flavors!  Up until now my favorite has been coconut creme syrup, but buttermilk syrup has ratcheted to top of my must have pancake toppings. This syrup is out of this world and would be good on anything -- pancakes, waffles, french toast.... My syrup is brown because as usual I used sucanat, but if you use white sugar, yours will be nice and white. Buttermilk Syrup Print Recipe type: Breakfast Author: My Most Delicious Dishes Blog Prep time: 5 mins Cook time: 7 mins Total time: 12 mins Serves: 6 Ingredients 1/2 cup butter 1 1/2 cups sugar 2 Tablespoons real maple syrup 3/4 cup buttermilk 1 teaspoon baking soda 1 teaspoon vanilla Instructions In a large saucepan over medium high heat, … [Read more...]
