Easy Dinner Rolls

Dinne rolls

This is my favorite dinner roll recipe and I've been making it for years.  The rolls are light and buttery and a perfect addition to any meal. I've tried freezing the rolls and then baking later, but I've never had good luck getting the rolls to rise after they've been frozen. Perfectly Easy Dinner Rolls 5.0 from 1 reviews Print Serves: 24 rolls Ingredients 1 cup warm water 2 packages active dry yeast (2.25 tsps) (not instant) 1/2 cup melted butter 1/2 cup sugar 3 eggs 1 teaspoon salt 4-4 1/2 cups flour Instructions Combine yeast and water in a large bowl. Let rest 5 minutes. Stir in butter, eggs, and salt (let the butter cool or you'll cook the eggs). Beat in flour, 1 cup at a time until dough is too stiff to mix. Cover and refrigerate 2 hours or up to 4 DAYS. When ready to bake, grease a 13 x 9 inch pan. Turn dough out on to lightly floured surface. Divide dough in to 24 equal pieces. Banana Bread

Banana Bread

I made some banana bread last week and I couldn't believe that I haven't shared this recipe yet! I have tried many, many banana bread recipes. They were all OK, but nothing spectacular.  This banana bread recipe, however, is perfect.  The bread turns out moist, sweet and banana-y.  My friend, Kim, always brings this banana bread to our cookie exchange in December and it's a huge hit. The original recipe calls for buttermilk (as written below), but you can substitute plain milk or I've even made it with plain yogurt as a substitute. This week I made this recipe with 1 3/4 cups of all purpose flour and 3/4 cup white whole wheat flour and I couldn't tell a difference. Banana Bread Print Prep time: 10 mins Cook time: 1 hour Total time: 1 hour 10 mins Serves: 1-4 loaves Ingredients 1 1/4 cups sugar 1/2 cup butter, softened 2 eggs 1 1/2 cups mashed bananas 1/2 cup buttermilk 1 teaspoon vanilla 2 1/2 cups flour 1 teaspoon baking soda 1 … [Read more...]

Cream Biscuits

biscuits

Have any heavy cream leftover  from making some homemade truffles?  This is biscuit recipe is a great way to use up some leftover heavy cream, but it's also a great reason to buy heavy cream if you don't have any.  This recipe is hands down the easiest and best way to get light, fluffy biscuits.  And any biscuit recipe that doesn't require cutting in butter is a winner in my book.   Cream Biscuits Print Prep time: 10 mins Cook time: 15 mins Total time: 25 mins Serves: 12 Ingredients 2 cups all-purpose flour 1 teaspoon salt 1 Tablespoon baking powder 2 teaspoons sugar 1 to 1 1/2 cups heavy cream 1/3 cup (5 1/3 Tablespoons) butter, melted Instructions Preheat oven to 425 degrees. Combine dry ingredients in a bowl. Whisk to incorporate together. While stirring constantly, slowly add in 1 cup cream. Use hands to form mixture in to a dough and add more cream if necessary to form a dough. Knead for 1 minute. Pat dough … [Read more...]

Never Fail Bread

OLYMPUS DIGITAL CAMERA

I have been making my own bread for about 4 years.  I use a variety of different methods and have tried a lot of recipes for all kinds of bread. When I saw this recipe for white bread, I was intrigued by the unique method used to form the dough in to loaves after the first rise.  I've done this type of folding dough, but usually the technique is used to get a flaky result (like in scones or pastries).  This bread was so incredibly good!  It is, however, on the sweet side.  The next time I make it, I'll cut the sugar down to just a few tablespoons and increase the salt to a tablespoon or more. Flour amounts for bread can vary.  I only used 5 cups of flour when I made this bread.  The goal is to get a nice ball of dough that is tacky, but not overly sticky so you can't work with it.  The stickier the dough, the more tender the baked bread.  I try to leave my bread dough as wet as I can stand it. Also, don't worry too much about the water temperature.  You just don't want … [Read more...]

Garlic Pull Apart Bread

Garlic bread

This recipe was an "ah ha" moment for me.  I like to serve garlic bread with dinner, but my homemade bread is usually round boule type loaves and not the long french loaves garlic bread is made with.  So I usually just served plain old boring sliced bread.  But this recipe allows me to use my homemade round loaves and get some super yummy (and really fun) garlic bread.  I've served this several times and it's always a big hit. Garlic Pull Apart Bread Print Recipe type: Bread; Side Dish Author: Adapted from Our Best Bites Prep time: 15 mins Cook time: 15 mins Total time: 30 mins Serves: 8 Ingredients 1 loaf round bread 1 cup shredded mozzarella cheese 2-5 Tablespoons softened butter 1-2 Tablespoons (approximately) Olive oil Dried oregano and basil, to taste Salt and pepper, to taste 2 garlic cloves, finely diced or pressed Instructions Slice bread every 1 1/2" not quite all the way through the loaf. Mini-Cinnamon Rolls

OLYMPUS DIGITAL CAMERA

There are those mornings when all I want is a cinnamon roll. Now.  I don't want to wait the 2-3 hours of rising and baking that a "normal" yeast roll would take.  These little guys are perfect for a quick cinnamon roll fix.  They are actually more biscuit rolls than true yeast cinnamon rolls, but they do in a pinch.  Plus they are "mini", which means they make a great breakfast side dish. Mini-Cinnamon Rolls Print Recipe type: Breakfast Author: http://www.canyoustayfordinner.com Prep time: 10 mins Cook time: 15 mins Total time: 25 mins Serves: 24 Ingredients 1 cup flour 1 teaspoon baking powder 1/4 teaspoon salt 3/4 cup heavy cream 2/3 cup brown sugar (or sucanat) 1 1/4 teaspoon cinnamon 3 Tablespoons butter, at room temperature Glaze: Powdered sugar Milk Vanilla or almond extract Instructions Preheat oven to 400 degrees. Homemade Boiled Pretzels

OLYMPUS DIGITAL CAMERA

My kids are pretzel fanatics.  I stopped buying pretzels at the grocery store years ago because I got tired of the constant requests for pretzels for breakfast, lunch and dinner. Now, they are a special treat.  Even more than they love eating pretzels, my kids love to make them.  We've made some before using a Guy Fieri recipe, which is a good recipe.  But this recipe makes amazing pretzels! I'd never seen a pretzel recipe that calls for boiling them first before baking them.  It's really a super quick step and totally worth the effort. I had a hard time getting my pretzels to get dark brown so I would suggest making sure your oven is fully pre-heated (I didn't wait) before baking.  In order to make the pretzels, the recipe has you cut up the dough and then roll it out like snakes, but that was hard for my kids. My 5 year old suggested we use the method Guy Fieri uses in his recipe: roll out the dough in to a rectangle; cut the dough into thin strips and fold those over to … [Read more...]

Three Cheese Garden Pizza

pizza

We make a lot of different pizzas around here.  The kids still prefer good old pepperoni, but this one is a grown up favorite.  I love to pile on the veggies! Baked French Toast with Streusel Topping

OLYMPUS DIGITAL CAMERA

This is the recipe I made for our Christmas breakfast this year.  I've made several baked French toast recipes, but none of them have been this easy and this delicious! But this recipe is from Pioneer Woman, and she never, ever dissapoints!  I used a Challah bread that I had in the freezer and it really kicked this up a notch.  There is plenty of sugar in the recipe already so I did not serve it with any syrup.  We ate this for two days and it warmed up beautifully in the toaster oven. I'm guessing it would freeze and re-heat really well. Baked French Toast with Streusel Topping Print Recipe type: Breakfast Author: Ree Drummond, The Pioneer Woman Prep time: 15 mins Cook time: 1 hour Total time: 1 hour 15 mins Serves: 8 Ingredients 1 loaf Challah, sourdough, French bread 8 whole eggs 2 cups whole milk 1/2 cup heavy whipping cream 3/4 cups sugar 2 Tablespoons vanilla extract Topping 1/2 cup all-purpose flour 1/2 cup Sucanat or brown … [Read more...]

Hoe Cake

OLYMPUS DIGITAL CAMERA

I'm not sure how I ever survived without Hoe Cake.  It is my go-to super quick breakfast bread as it is basically a very large biscuit. It takes way less time than rolling and cutting biscuits so it's great for a large crowd, too.  I use it for biscuits and gravy as well as the bread for dipping over easy eggs. It's a fabulous addition to the morning routine. Southern Plate, the blog where I found the Hoe Cake recipe, prefers if I just link over to her so I won't put the full recipe here, but I did want to share because I absolutely love Hoe Cake!  When I make the recipe, however, I change it up a bit. First, I use either cold butter or organic palm shortening instead of "vegetable shortening".  This is just my personal, whole foods, preference.  Second, I never use self-rising flour -- I just follow here directions for making your own by adding baking powder and salt to the flour.  Third, I use either coconut oil, butter, grapeseed oil or bacon grease in the … [Read more...]
