At the beginning of the month, I usually sit down and go over my calendar for both work and social obligations and this month there is quite a few of both. That means that if I’m busy working, I don’t have the time or energy to spend a lot of time making a holiday appetizer to bring to my parties. That’s when I like to cheat a little.
The Ladies Home Journal mentioned SeaPak Spring Rolls as one of the “The 15 Best Frozen Appetizers to Serve at a Party” which was also shared on The Today Show. Sounds like a great recommendation to me! I picked up a box of the spring rolls at Walmart for a test run before the parties start in full swing. The spring rolls come with their own dipping sauce, but I wanted to create a dipping sauce to make a fun holiday appetizer perfect for holiday parties.
We like to dip our spring rolls in a sweeter sauce – usually duck sauce. I happened to have an extra can of jellied cranberries leftover from Thanksgiving, which seemed like it’d make a great sweet dip that goes along with the holidays. It turned out great!
The SeaPak Shrimp Spring Rolls can either be baked or fried. I was a little worried that baking the spring rolls would make them soggy, which is just not a good texture for spring rolls. I shouldn’t worried, though, because they turned out nice and crisp.
Ladies Home Journal was right – the spring rolls taste super fresh. They are crispy on the outside and have a nice blend of shrimp and vegetables on the inside. They are also the perfect size for a party finger food. They can be eaten in two bites and aren’t greasy at all.

SeaPak Spring Rolls with Cranberry Dipping Sauce
Ingredients
- 1 box Rich's SeaPak Spring Rolls
- 1/4 cup jellied cranberries
- 2 Tablespoons white sugar
- 2 Tablespoons rice wine vinegar (or white vinegar)
- Splash of soy sauce
Instructions
- Combine cranberries, sugar, vinegar and soy sauce in a small sauce pan. Whisk over low heat until sugar is dissolved in the mixture. Remove from heat and set aside.
- Prepare spring rolls according to package instructions.
- Serve spring rolls with the cranberry dipping sauce.
