Potato and leek soup is one of the easiest and most delicious soups you can make.  We generally make this during the summer when we can get potatoes and leeks from our local farmer.  Serve the soup with slow cooker dinner rolls and you don't even have to turn on the oven. I have been wanting to try Julia Child's potato and leek soup recipe.  So a few summers ago, even though it was over 100 degrees, I couldn't turn down the opportunity to make the recipe with potatoes and leeks we picked ourselves. We picked the produce in the morning and made soup in the evening.  Talk about farm to table! Our then 11 year old helped cook dinner once a week so she actually made the soup. She was very proud of her dinner and was begging our picky 4 year old to just try a little bit! It's amazing that water, potatoes, leeks, salt, and pepper make such a delicious meal. Tomato soup is super easy to make.  I like to make a huge batch and then freeze it for an easy lunch later.   This tomato soup recipe is easy to make and uses everyday ingredients that won't require a special trip to the grocery store.   Tomato soup and grilled cheese sandwiches are classic comfort foods.  I recently discovered grilled bacon Chipotle pimento cheese sandwiches and they are my new favorite grilled cheese sandwich!  But I needed a good homemade tomato soup to round them out.  My favorite tomato soup is from the cafe in Nordstrom department store.  I only discovered this extraordinary soup a few years ago and have been trying to replicate their tomato soup at home since.   Some people like knock off purses, I like knock off recipes! Figuring out how to make homemade cream of mushroom soup  has been a major turning point in my cooking.  Now that I have this cream of mushroom soup recipe in my recipe file, I don't have to worry if I have some on my pantry or be concerned about the ingredients.   This homemade cream of mushroom soup recipes is my new pantry staple! I wish you could smell my house while this cooked.  Oh my goodness.  Better yet, make this yourself and your children will run around telling you how good it smells (even if they refuse to eat it!).
