Baked macaroni and cheese is the quintessential comfort food.  This one pot recipe adds a touch of the American classic Velveeta cheese to create a smooth, creamy, and delicious recipe filled with Velveeta's Liquid Gold that the entire family will love. This is the first macaroni and cheese recipe to grace this site.  The truth is that I don't really like homemade mac and cheese.  I prefer the kind in a box - any box, really.  I could never find the right combination of cheeses. When I mentioned to my husband that I wanted to try a baked macaroni and cheese, he voted for Velveeta. Scalloped potatoes are the perfect comfort food and winter side dish.  Sliced potatoes combined with cream of mushroom soup are then layered with cheese and dotted with butter.  Then bake in the oven or your slow cooker for a filling and delicious compliment to any meal.   Most people serve some kind of potatoes for Thanksgiving.  In our house, we always have mashed potatoes, my mom's  broccoli casserole, and pumpkin cheesecake with our turkey.  But this year I'm thinking about mixing things up and serving scalloped potatoes.  This is the one recipe my dad requests I make most often, so I'm pretty sure he wouldn't mind! Welcome to the Newman's Own Organics Food. Fun. Hop. event hosted by Shy Babies and Little Inspiration.   For this event, we were given dried fruit from Newman's Own Organic and asked to create a recipe using the fruit.  When I saw the combination of dried cranberries, dried apples and a dried berry blend, I knew I wanted to use them in a curry dish.   This rice dish is so flavorful!  The fruit re-hydrated beautifully and added a touch of sweetness to the dish.  My 3 year old super eater inhaled it.  I did forget to set the timer for 20 minutes and burnt the bottom a bit, but we just didn't eat that part.  I served the rice with Curried Chicken Kebabs  for a full curry experience, but this would also be great with baked or grilled chicken of any kind. Cucumbers are some of my favorite summer side dishes.  They are so inexpensive all summer long that it's hard to pass them up at the farmer's market.  Cukes are also very refreshing as a cold side dish on a hot summer evening.  For years I've been making a cucumber salad with sour cream, but it's not a favorite of my husband.   So I decided to play around with a vinaigrette style dressing to see how that would go over.  My husband ate three servings so I'd say it was a hit. There are no exact measurements.  Just use as much or little as you'd like to taste and experiment with other types of vinegar and oils to change up the taste. Simple Cucumber Salad   Save Print   Ingredients 2 cucumbers White wine vinegar Salt Olive oil Pepper Instructions Cut cumbers in half and use a spoon to scoop out the seeds.
