Pesto Shrimp Roll Sandwiches #SundaySupper

Shrimp Roll

Pesto shrimp roll sandwiches are my version of a poor man's lobster roll.  Cooked shrimp is mixed with a pesto mayonnaise and served atop lettuce on a big crusty bun.  The shrimp can be prepared a day or two before for easy entertaining or on the go meal. My husband has a deep love for lobster.  We have a standing  joke about what's for dinner - lobster! Every night!  Our Sunday Supper theme this week is Fathers Day so I wanted to make something lobster-esque for my husband for his big day.  It occurred to me that I could make a lobster roll but use shrimp instead of the lobster.  It wouldn't be exactly the same, but shrimp is up there in his list of favorite foods so I knew it'd be close enough. I added the pesto at the last minute because I thought it'd taste delicious.  It did!  I served the shrimp salad on French bread because that's what my husband wanted, but I would have preferred a little less bread so a small bread roll or even a hot dog bun would ... Lemon Cupcakes with Blackberry Frosting

Lemon Cupcakes

Lemon cupcakes are an easy summer dessert perfect for potlucks and picnics.  I topped the lemon cupcakes with a blackberry frosting that is a cinch to pull together by adding blackberry preserves to a basic buttercream frosting.  Don't worry if you have extra lemons - Good Cooks Citrus Keepers will keep it fresh in the fridge for the next batch of lemon cupcakes! I recently became a Good Cook Kitchen Expert, which means I will be sharing reviews and recipes on all types of fun Good Cook kitchen gadgets! The Cantaloupe Keeper is great for all the summer melons that don't get eaten at the picnic.  I always have parts ... [read more]

Grilling Beef Skewers with Chimichurri Sauce

chimichurri sauce

Chimichurri sauce is a popular oil and vinegar based sauce that is served with steak and beef in Argentina.  We love to serve chimichurri sauce when grilling beef skewers  made with  marinated steak and vegetables.  This is one of our favorite summer grilling recipes! As the temperatures begin to warm up, I start plotting ways to avoid turning on my stove and oven.  We intentionally grill a lot of our food during the summer  so we can keep the inside of the house as cool as possible.  Beef skewers with chimichurri sauce is one of  our favorite summer grilling recipes!  After reading about chimichurri sauce in many food magazines, I finally got around to making one and we love it.  The beef and sauce are full of flavor and the skewers are a great way to include a lot of vegetables without a lot of hassle. There is nothing I love better in the summer than grilling steak - especially when I find it 50% off! I got lucky on this one. I needed sirloin for this recipe ... [read more]

Easy Parmesan Cheese Bread

Cheese Bread

Cheese bread is one of my favorite forms of carbs.  This cheese bread is basically a savory version of a cream puff.  The batter comes together quickly with just butter, water, flour and eggs.  Stir in cheese and bake for an easy cheese bread perfect for any night! I didn't set out to make cheese bread for this month's Secret Recipe Club.  In fact, On The Move - In the Galley made it very difficult to choose a recipe.  What an amazing collection of recipes there are on this blog!  I really didn't have anything in mind when I went searching.  The crepes with Lemon Parsley Sauce look amazing.  When I saw the Parmesan Puff recipe and realized that it is basically a savory rendition of a cream puff, I knew I had to try it. What I love about this recipe is that you can make it your own very easily.  I just used Parmesan cheese, but any cheese would work.  Then add your favorite herbs - straight from your garden, perhaps.  We ate these with all sorts of meals - salmon, ...
