Growing up, every year for New Year’s Eve my family would go out to dinner with friends and then go home, usually by about 8:30 PM. I hated it. I wanted to go do something to celebrate the New Year! Then when I got married and had kids, I started falling in to that same rut of dinner, TV, bed. Boring! So last year when we were invited to a small town a few hours from where we live to celebrate New Year’s Eve at the town’s outdoor party, I talked my husband in to going. We had so much fun that we went again this year.
A few days before leaving town, we headed to Sam’s Club to find some snacks and appetizers to take on the road for our New Year’s Eve shin dig. You can check out my entire Sam’s Club shopping trip photos in my Google+ album. I knew I had to get easy finger food that everyone would enjoy. Luckily the hotel had both a fridge and a microwave in the rooms so I could plan on cooling and heating food easily. I scored when I discovered Daily Chef Bruschetta – an all in one appetizer that came with the bread and the bruschetta ready to go. I had a hard time choosing between Chicken and Bacon or Spinach, Artichoke and Chicken but in the end, my love of all things spinach and artichoke won.
The morning we were scheduled to leave, I baked the bruschetta and then let cool while I was making breakfast. The bruschetta only needs 10 minutes to cook so it was super easy. Once cooled, I threw it in a plastic bag and we were ready to go! Once we got to the hotel, I simply microwaved the bruschetta when we were ready to eat it and set it out on our little table in our room.
The cheese puffs and sparkling apple juice were for the kids. The bruschetta was for the adults to snack on and everyone really enjoyed it.
I caught my husband helping himself while the rest of us were with the kids at the pool.
My sister, Karin, and my aunt stopped over for a little snack after entertaining the kids in the pool. They worked off the calories before eating them!
We had such a fun time getting out of town for New Year’s Eve and our treats from Sam’s Club were just what we needed to help ring in 2013.
