Food.Fun.Hop! featuring Wholly Salsa Huevos Rancheros (and a Giveaway!)
I am super excited to bring the very first Food.Fun.Hop event! A group of foodie bloggers, hosted by Shy Babies and Little Inspiration, have teamed up to bring you a recipe and a food related giveaway on a regular basis. My husband is a salsa fanatic. Salsa and chips is his go to snack and we always have both in the house. So when he saw EIGHT salsas show up on our front step, he was a little excited.
We have eaten a lot of different brands of salsa and this is hands down the best we’ve had! In fact, I couldn’t stop eating it! The salsa tasted like freshly made salsa we have at our favorite Mexican restaurant. I’m fairly certain that my husband will not be eating any other brands of salsa from now on! The salsa line includes Classic mild, medium and hot; Avocado Verde; Roasted Tomato; Red Pepper Mango; Pineapple; and Guacamole and Spicy Pico. And I had to choose ONE to use in a recipe!
When we moved to Las Vegas eight years ago, I was really excited about learning how to cook southwestern food. Growing up in Michigan, we don’t use many peppers or make any tamales. One of my favorite southwestern dishes is actually a breakfast dish — Huevos Rancheros. I first had Huevos Rancheros in Santa Fe, New Mexico on our drive to move to Arizona. I’d always wanted to try the dish even though the thought of salsa on eggs concerned me. One bite and I was hooked! This recipe is so simple and versatile — use any salsa, add beans, onions, cilantro — whatever you want! You can scramble or fry your eggs, but I prefer them fried and soft so the yolk mixes with the salsa. This also makes for a quick and easy weeknight meal!
- Corn tortillas
- Wholly Salsa, any flavor (I used Roasted Tomato)
- Beans, onions, cilantro (optional)
- Heat a griddle or skillet over medium heat. Add oil to coat. Heat tortillas until soft and bubbly just a bit browned. Set on a plate and cover to keep warm.
- In the same griddle or skillet, melt some butter or heat oil. Prepare eggs as desired. Remove eggs from griddle and place on top of tortillas.
- Top eggs with salsa and any other desired toppings.
