Ever had green shortbread? This shortbread recipe results in a pretty green treat full of yummy pistachio flavor perfect for Sta. Patrick's Day, a spring tea or just an any day treat. Pistachio is one of my favorite flavors, but I rarely cook with them.  When I ran across this shortbread recipe that used pistachios and was so pretty green, I couldn't wait to try it. This shortbread recipe come together really quickly. I did have some issues getting the dough to form, but a teaspoon of water did the trick. I also lost a lot of pistachios when flipping the shortbread out of the pan. Next time, I'll try to mix a few in to the dough.  Overall, though, this is a delicious shortbread with a great pistachio flavor. I would suggest eating the shortbread within a few days as the flavor really diminished with time. Here is a fun multicultural breakfast treat - Irish cream French toast.  It's so delicious, you don't even need syrup - just some bread, eggs and homemade Irish cream coffee creamer.   Of course this would be great for St. Patrick's Day! Oh breakfast - I love to be fancy at breakfast.  German oven pancakes, red velvet pancakes,  bananas foster French toast ... apparently I like to be fancy with bread.  I'm Ok with that!  So when I had a couple of comments on my homemade Irish cream coffee creamer recipe about how delicious it sounded, but they aren't coffee drinkers, well, what a shame to waste such a yummy treat. So I made french toast with it.  This turned out so yummy my 4 year old son kept saying "I just can't stop eating this!"  I had to agree! With St. Patrick's Day just around the corner, I have Irish cream on the brain.   My homemade Irish cream is a favorite adult beverage, but I wanted something the kids could enjoy, too.   Plus I love flavored coffee creamers, but not all the junk ingredients  in them. A few years ago I made my first batch of homemade Irish cream.  The recipe started the wheels churning to make the recipe in to an Irish Cream coffee creamer.   I'm a major coffee drinker of all kinds like cardamom coffee and iced coffee. I also like my tea with a little cream and I'm thinking this Irish Cream coffee creamer would be an interesting addition to tea. This coffee creamer comes together really quickly and just store it in the fridge.  Make sure to shake it up before using it because the chocolate sauce tends to settle to the bottom. Irish cream is a decadent adult beverage that I often enjoy in my coffee or use to make milk shakes with a kick.  But store bought Irish cream is expensive whereas this homemade version is very affordable. I use homemade chocolate syrup to make it even more frugal. I don't like much alcohol, but Irish cream is one of the few exceptions.  Unfortunately, it's also pretty expensive so I rarely had it around.  A few years ago I ran across a recipe for homemade Irish cream and it turns out to be super easy to make. I looked at a lot of recipes and they are all virtually the same. Most call for whiskey, but I opted for vodka because that's what I have on hand. You can make your own sweetened condensed milk, if you don't have any in your pantry.  I've also made this before use a can of evaporated milk.  I just dissolved 1/2 cup sugar in the evaporated milk and called it good.
