One Bowl Carrot Cake

Carrot-cake-2

This easy carrot cake recipe comes together quickly in just one bowl! Mix, pour and bake for the most delicious carrot cake you'll ever have. This is a no nonsense carrot cake.  There are no raisins or pineapple are any other junk to mess it up.  And it's certainly not carrot muffins!  It's just plain, pure carrot cake at it's best.  Top the cake with cream cheese frosting for a truly delectable dessert. My mom is not much of a baker, but carrot cake is her thing.  I've never had a carrot cake as good as hers!  I'll even warn you that no matter how many times I've made this recipe, it's never as good as hers. But I'll keep trying! I made carrot cake cupcakes for Easter even though in our family carrot cake is only made for my dad's birthday in May.   As you can tell, my cupcakes were very small.  I would recommend making this in a 9 x 13 and just sticking with that.  If you do want to make cupcakes, this recipe will make around 3 dozen.  Also, make sure to fill the ... Divinely Inspired Chocolate Candy from Skinny Cow

Skinny Cow Divine Filled Chocolates Candy

Who doesn't love chocolate? Ok, I'm sure someone in the world doesn't love chocolate, but let's face it, chocolate makes the world a better place. And with Easter just around the corner, it seems I'm finding chocolate everywhere!  I particularly prefer my chocolate in the form of brownies, but sometimes, I just want to open up a package of decadence and enjoy a little sweetness. Skinny Cow's new Divine Filled Chocolates are a truly a divine way to fulfill that chocolate craving. The weather around is getting warm - like 80's and even maybe the 90's warm! The NEW Skinny Cow Divine Filled Chocolates are only 130 calories for 3 pieces. My kind of Easter, pre-swimsuit chocolate. Of course, I ... [read more]

Homemade Gummy Candy

Homemade Gummy Candy from growingupgabel.com @thgabels #recipe

My family loves gummy candy in all shapes, sizes and flavors! A few years ago I discovered a recipe to make it at home so we tried it out. It was so easy! Just three ingredients and some kind of mold is all you need.  In half an hour, you will have your own gummy candy. Gummy candy is about the easiest kid friendly recipe I've ever tried. My four year old could pretty much make these herself (except the "cooking" portion).  We aren't really big Jell-O eaters, but I try to keep a few boxes in the pantry for a quick afternoon gummy candy making session when some boredom sets in.  Not exactly the healthiest of snacks but it's fun to make! You basically use three ingredients: water, gelatin and Jell-O.  I'm thinking you could also use just fruit juice instead of the Jell-O and add another packet or two of gelatin, but I haven't tried that yet.   We usually make our gummy candy in candy molds, but I had a new silicone bunny mold I wanted to try out. The gummy candy made ... [read more]

Frosted Flake Noodle Kugel

Noodle Kugel from growingupgabel.com @thegabels #Passover #recipe

Noodle kugel is our traditional Passover desert served at the end of our Seder. This noodle pudding is a sweet mixture of eggs, butter, sugar, topped with cereal for a delightful treat.   Noodle kugel is one of those dishes that you've never heard of unless you know someone Jewish.  I'd never heard of kugel until I married my husband.   Even then, it's taken me almost a decade to "get" kugel.  Is it a dessert? A side dish? Is it served hot or cold?  It's all very confusing! Noodle kugel is basically a noodle pudding.  It can be sweet or savory and can be served hot or cold.  I always make it sweet and serve it hot as a dessert.  I've always used my mother-in-law's recipe to make kugel, but this time I wanted to try something different just to compare.  When I read the story about Smitten Kitchen's family kugel, I had to try it out. This is a super yummy kugel on it's own, but I had to add one more touch -- a frosted flakes topping.  My mother-in-law covered ... [read more]
