Fried Ice cream is one of my all time favorite desserts! But a deep fried ice cream recipe just seems like a bit much even for me.  So we're faking it instead.  A vanilla ice cream mixture is enveloped by a crunchy cereal crust creating an amazing fried ice cream look alike that is perfect for a Cinco de Mayo crowd! This week's Sunday Supper is celebrating Cinco de Mayo! I have quite a few Mexican recipes including refried beans, enchiladas, and even sangria.  But what I really want when I eat Mexican food is fried ice cream.   When I ran across this recipe on Pinterest, I had to try it.  I adapted the recipe to use homemade whipped cream and homemade chocolate sauce. Baked tilapia can be on your dinner table in about 15 minutes!  This is the epitome of a quick and easy meal.  Tilapia fillets are covered in a delicious Parmesan basil spread made from basic pantry ingredients.  Broil the fillets for less than 10 minutes and serve. This week's Sunday Supper's theme is New Adventures.  Each of the participants this week are conquering a new cooking adventure and yes, mine is fish!  I don't have any fish recipes to call my own other than some awesome shrimp recipes and one sashimi salmon recipe. Usually when we have fish my husband cooks it on the grill.  Up until I made this baked tilapia, I had never bothered to figure out how to cook fish.  But oh how things have changed.  This recipe was amazing and it was so simple to throw together.
