Salmon Patties

As long as you have the oil heated up for latkes, you might as well use it to make dinner. Salmon patties are not something I grew up eating, this is from my husband's family. I got the recipe from my mother-in-law, who cooked by "dump this and then that" instructions. After a few tries, I got the mixture right and added a few spices to give the patties a nice flavor. I serve them with a side of spaghetti and marinara sauce because that's how my husband's grandmother served them. I also include a green vegetable, though. Beef with Broccoli

This is actually beef with broccoli and mushrooms and onions, but it's still delicious! Whenever I cook stir fry I'm always amazed at how quick and easy it is to get a fabulous meal on the table for dinner. I love this dish! And it's a one pot dish with all the broccoli. Just steam some rice and you are good to go. I used red wine in place of the Chinese rice wine with good results. I also added mushrooms and onions. I doubled the recipe and we barely had leftovers so plan ahead if you have a crowd or are hungry! Broccoli Cheese Soup

When my husband and I were first dating, we ate at Panera every single week after church. We loved to get the broccoli cheese soup in a bread bowl. This is the closest I've come to replicating that soup -- it was delicious! The recipe calls for 4 heads of broccoli, but I had a bag of chopped broccoli from Costco. I just kept putting broccoli in until it looked like enough. I used an immersion blender to blend the soup just a little leaving most of the broccoli whole. But feel free to blend or not as much as you want. Cashew Chicken

One of my favorite things to do in the kitchen is make "take out fake out". I love to try and re-create our favorite restaurant dishes at home. We really love Chinese food and I do a pretty good job re-creating our favorite Chinese dishes. This was my first attempt at cashew chicken and it was delicious! I'm not sure if it was the baking soda rub or the oyster sauce, but this tasted closer to take out Chinese than any other dish I've made. Slow Cooker Beef Stroganoff
We love beef stroganoff, but I had a really hard time finding a good recipe. Until I found this one and I love this version! This recipe starts in the slow cooker and finishes on the stove so it's not very labor intensive at all. Don't let the laundry list of ingredients scare you off -- it's very easy! I decreased the amount of sour cream called for in the original because I think it overwhelmed the other flavors and increased the mushrooms because I love them! If your roast is frozen solid just cook it on high in the slow cooker for 2 hours and then on low for another 6 hours. (I forgot to snap a picture! Sorry! But this is so good, that I still wanted to share.) Fried Chicken Strips

I like to serve a big salad for dinner and I have found that adding protein to the salad helps us to feel full longer. Lately I've been frying up chicken strips for salads and we love them! I have avoided making "chicken fingers" or "chicken nuggets" because usually my kids just wouldn't eat them since they weren't overly-processed and they usually take a lot of work to make But these strips are quick and the kids gobble them up. Autumn Chopped Salad

I love chopped salad, but usually I serve it with more of an Italian feel with pepperoncini and pepperoni. This salad is a great way to incorporate all the tastes of autumn into a filling and delicious salad. I added fried chicken pieces to our salad because I like protein in our meals. Slow Cooker Lentil and Sausage Soup

When I do my weekly menu planning, I usually run the completed menu by my husband just to get his input. One week recently I put lentil soup on the menu and we ended up in quite a heated discussion about lentil soup. He doesn't like it if the lentils aren't cooked enough (this happened ONCE!) and I like lentils because they are super inexpensive. The next day he came from work and told me that the DJ on the radio had been talking about cheap but healthy meal options. The most inexpensive but healthiest food option? LENTILS! I have a few different versions of lentil soup. But this lentil soup kicks it up a notch and was SO GOOD! I always keep a bag of lentils in my pantry for a quick, easy, filling and healthy soup. Making homemade soup, believe it or not, is very simple. I used to think that soup required a lot of time to make, but the exact opposite is true. Most soups that I make require 30 minutes or less of prep and cooking! And they are so much healthier and taste better than the canned stuff. Italian Wedding Soup is one of our all time favorite soups. If you have broth and meatballs in the freezer, this literally takes about 15 minutes to come together. I serve it with fresh bread from the oven and it always fill us up. This recipe is very versatile. You can homemade broth and meatballs or use store bought ones.
