I love recipes with a lot of flavor and this one is full of it!   This is one of those dishes that is just down home good and filling.  Beef, gravy, pasta and a side of green beans make for an excellent family dinner.  Chop everything before you start because this is one of those dishes where once you start cooking, the dish needs your full attention.  That said, this came together very quickly. Wine Braised Beef Short Ribs

I'd never heard of beef short ribs until we started buying our beef in bulk from a local rancher.  In most of our packages we'd get a couple of pounds of short ribs.  After much research, I discovered that the only way to really cook short ribs is slow and low because they are a tough cut of beef.  I've tried several different recipes for short ribs and they've all been fine, but nothing spectacular.   When we got another package of ribs in our most recent beef delivery, I decided to seek out another recipe to see if I could find something I actually love. Well, I did.  This is by far the best recipe I've cooked for short ribs! Short ribs are very fatty so I cooked this one day and then put it in the refrigerator overnight.  I was able to scoop out the hardened fat the next day and just re-warmed the ribs up right in the crock of the slow cooker. Spaghetti Carbonara

I've been perusing carbonara recipes for months.  The combination of bacon, pasta, and Parmesan cheese just sounds delicious.  But I kept getting hung up on the egg.  I just wasn't sure about putting eggs in my pasta.  I had visions of bacon, pasta, Parmesan cheese and scrambled eggs.  Finally, I decided to be brave and just go for it -- and it's wonderful!  The egg makes the pasta creamy and you can't taste it at all. I totally messed up this recipe because I didn't bother to read through the recipe before I started cooking.  I didn't realize that the pasta needed to be hot and I cooked the spaghetti first and let it sit in the strainer in the sink.  So instead, I added the spaghetti to the frying pan after the onions and garlic were done cooking, stirred it all together and let the pasta warm up.  Then I added the egg and stirred quickly to coat the spaghetti.  I turned the heat off, kept stirring, and added the bacon and cheese. A few years ago I decided that there had to be a way to make tuna noodle casserole appetizing.  So I set to create a recipe that didn't include canned soup and didn't taste like it came from a high school cafeteria.   This recipe is the result.  I thought it was pretty good, but I also was pretty sure that I was biased.  When my sister raved about the recipe, however, I knew it was worthy of sharing.  Don't tell your husband or kids what it's called and just go for it.  I like to serve it with tossed salad. Fried chicken is one of those things I put off making because I just figured it was too much of a hassle for a mediocre result. I was totally wrong.   Aside from having to plan ahead, this recipe is easy and mouth watering delicious. In order to move things along, I fried the chicken in two cast iron pans (one small and one large) at the same time.  The chicken really needs to sit in the oil and cook so you can easily manage two pans at once.   I used only chicken thighs and legs since they are smaller pieces and cook faster. Argentine Beef Skewers with Chimichurri Sauce

As the temperatures begin to warm up, I start thinking about not heating up my kitchen (and thus my house).  We intentionally grill a lot of our food during the summer and this is one of my favorite grilling recipes!  The beef and sauce are full of flavor. You could definitely serve this with rice or pasta, but I served it with roasted asparagus and fingerling potato skewers. The original recipe calls for tenderloin, but I used sirloin. Use whatever steak you have or find at a great price. I forgot to snap a photo of the chimichurri sauce. Every picture I've ever seen of chimichurri sauce, the sauce is green, but this turned out clear like a vinaigrette.   My husband and I first made beer can chicken shortly after we were married.  We bought a gadget to put the beer can in and fired up the grill, but  for whatever reason, we weren't impressed.   Last summer while cleaning out the garage, I found the beer can gadget and  decided that we should give beer can chicken another go. I don't know what my problem was when we mad this years ago, but this is now my favorite way to cook a whole chicken!  The skin is  crisp and the meat is perfectly moist.  Our family inhaled a 4 pound bird. We grilled our chicken on a round baking sheet, just for ease of moving the bird in and out of the house.  Be careful when lifting the bird off the can as the chicken will be falling part.  You may want to let it cool a bit before attempting to remove the can. Chili is one of those dishes that I just can't seem to master.  I've tried so many different variations of chili and nothing has been quite "it". This chili is so different and so good!  The pork is so tender!  This chili is spicy hot.  Six cups of chiles is a lot of heat! I don't think I used quite six cups, probably closer to 3-4 so use your judgement on how much you want in there. If you want, you can use canned enchilada sauce, chiles, and beans.  I used homemade salsa verde, fresh chiles (mostly serrano and jalapeno) and beans I'd cooked and frozen.  I bought cheap pork chops and cut off the fat and bones and diced them up. You could also try ground pork or even diced or ground chicken.   I'm not really sure what is "Amish" about this recipe, but  it makes some mighty fine chicken. My husband thought I had FRIED  the chicken! Now, that's impressive for a baked chicken recipe.  I scoffed at making three pounds of chicken for my little family... that's 8 chicken thighs. It's gone. All of it.  So definitely double this recipe if you've got a lot of mouths to feed.
