Baked French Toast with Streusel Topping

This is the recipe I made for our Christmas breakfast this year.  I've made several baked French toast recipes, but none of them have been this easy and this delicious! But this recipe is from Pioneer Woman, and she never, ever dissapoints!  I used a Challah bread that I had in the freezer and it really kicked this up a notch.  There is plenty of sugar in the recipe already so I did not serve it with any syrup.  We ate this for two days and it warmed up beautifully in the toaster oven. I'm guessing it would freeze and re-heat really well. Hoe Cake

  I'm not sure how I ever survived without Hoe Cake.  It is my go-to super quick breakfast bread as it is basically a very large biscuit. It takes way less time than rolling and cutting biscuits so it's great for a large crowd, too.  I use it for biscuits and gravy as well as the bread for dipping over easy eggs. It's a fabulous addition to the morning routine. Southern Plate,the blog where I found the Hoe Cake recipe, prefers if I just link over to her so I won't put the full recipe here, but I did want to share because I absolutely love Hoe Cake!  When I make the recipe, however, I change it up a bit. I have spent the past 5 years trying to figure out how to have fresh, homemade cinnamon rolls on Christmas morning.  As a kid, we ate the cinnamon rolls out of the tube, which, frankly, is much more convenient even if less appetizing.  Every single recipe I have for cinnamon rolls takes a good two hours to make with all the rising.  I've tried refrigerating overnight to rise, but that never seems to work.  I could get up at 3 AM to start them, but I don't want the rolls THAT much!  This dilemma may be the bane of my Christmas existence for the rest of my life. I'm OK with that, though, because I have a lot of other really yummy options for Christmas breakfast!    They are a festive red and oh so delicious! Super simple and quick! Glazed Cinnamon Scones

I have made more than my fair share of scones in the past few years.  Most scone recipes require the same basic techniques and ingredients and they are quite simple and quick to make.  These glazed cinnamon scones, however, are just amazing!  I couldn't believe how tender and flaky they are.  I'm not really sure why they turned out so much better than other recipes because they use the same basic ingredients and techniques.  Maybe it was the chilly weather the day I made them or the fact that I haven't had a scone in a while. Red Velvet Pancakes

My kids really love pancakes so we eat them quite often for breakfast.  I used to really enjoy pancakes, but since they've become a regular breakfast item, I've grown rather bored with them.  I am always looking for a new and unusual pancake recipe just to change things up. Red velvet pancakes had me at "hello"!  I was so hoping that these would be good because I really need a new pancake to love.  These pancakes were so good that I happily ate them for breakfast two days in a row.  If you love red velvet anything, these will not disappoint! I used a new all natural red food dye so my red wasn't deep (they were more dark pink) and they really weren't red after cooking, but that's OK because they tasted AWESOME!  My daughter asked if next time we could make them blue... blue velvet.... tee hee. Buttermilk Syrup

I am not a huge fan of maple syrup.  I discovered grade B maple syrup a year ago and that helped a bit, but in general, I think maple syrup ruins a good pancake.  I finally realized that I could actually make my own syrups of all kinds of different flavors!  Up until now my favorite has been coconut creme syrup, but buttermilk syrup has ratcheted to top of my must have pancake toppings. This syrup is out of this world and would be good on anything -- pancakes, waffles, french toast.... My syrup is brown because as usual I used sucanat, but if you use white sugar, yours will be nice and white. Maple Java Cinnamon Rolls

I had never made a cinnamon roll in my life until just after I got married. Up until then cinnamon rolls that came out of my oven came out of a tube. I had picked up a frugal living book at the thrift shop and one of the author's main points was to save money by cooking from scratch.  One of the recipes she included in the book was for cinnamon rolls.  I have never looked at a tube of cinnamon rolls again. I have tried several recipes for cinnamon rolls and they are all good, but this one is over the top spectacular.  This is my adaptation of Pioneer Woman's cinnamon rolls mostly following her recipe but using organic alternatives. Don't skip the icing or make just plain icing -- the icing makes these rolls! I make "powdered sucanat" to use in place of powdered sugar when color doesn't matter.  I just whir some sucanat in my food processor blender until it's powder. We love scones around here.  Scones are super quick to make and freeze very well! One of my husband's favorite fall treats are the pumpkin scones at Starbucks.   I've never had one, but he says these are just as good (if not better, of course!). With scones, try not to over work the dough.  All of the flour may not get worked in all the way and that's just fine! Simple Waffles

My kids are usually pancake eaters for breakfast, but recently they have been asking for waffles instead.  My favorite waffle recipe, Overnight Yeasted Waffles,  are not exactly the kind of waffles you can make on a whim. So I went searching for a simple and quick waffle recipe that didn't require beating egg whites or letting yeast rise. And boy, did I find a winner! These waffles are crisp on the outside and tender on the inside. When it comes to waffles, it's important to really whip your eggs up so I actually used a blender to get mine nice and frothy, but a tiny bit of elbow grease with a whisk would work, too. The other thing that made these waffles superb was the flavor. I accidentally poured in more vanilla than intended.  I'm guessing it was around 1 1/2 teaspoons of vanilla, but adjust to your taste. Pumpkin “Donut Holes”

So technically, these are mini-muffins because they are baked in a mini-muffin pan, but they taste just like pumpkin donut holes.  My kids ate this entire batch in one morning.  These are seriously addicting and delicious.  I only have 24 min-muffin cups, but had batter left over so I baked the rest of the batter in regular sized muffin cups and they did not turn out as well.  I would stick to mini when making these.
