Gluten free pancakes made with almond flour are a delicious way to pack a healthy punch at breakfast - or dinner! Made in the blender with almond flours these gluten free pancakes are ready in a hurry, too. When my family  went gluten free earlier this year, I checked out many different sources to find gluten free recipes.  I'm not a big fan of gluten free flour mixes, so I stick mainly with almond flour and coconut flour.  I purchased The Gluten Free Almond Flour Cookbook by Elana Amsterdam to help me learn how to cook with almond flour.  I haven't yet gotten past the pancake recipe! Baked Blueberry Donuts

Baked donuts are a fun breakfast or treat! These blueberry donuts are drizzled with a lemon glaze for a delicious flavor combination. We are a family of donut lovers, but really, who doesn't love donuts?  I've tried frying donuts a few times and while they are yummy,  I've been wanting to try baked donuts.  This summer I just found two heart shaped donut pans on clearance at a store in Michigan so I snatched them up and our baked donut journey has begun. I thought that baked donuts would be heavy and dense like the cake donuts at the donut shop.  Turns out you can make light fluffy baked donuts! In fact, the texture of these reminds me more of a Krispy Kreme donut than a cake donut.   The cake flour probably helps with the density.   My flour ratio is only because I ran out of cake flour -- use 3 cups if you have it! I love monkey bread, but I don't love bread dough from a can.  After many attempts, I finally managed to nail down a homemade monkey bread that is made entirely from scratch  - no tubes or cans!  This is easy and the kids love to help make it. I really enjoy a good monkey bread, but I really don't like my bread products to come from a tube.  So homemade monkey bread was on my "to make" list for years.  The problem I ran in to was that most of the homemade monkey bread recipes I found required yeast and thus rising time. I wanted a recipe that was as quick and easy as using tubed biscuit dough.  After many failed attempts, I finally got it right! A note about the buttermilk - you can use yogurt in lieu of the buttermilk.  Just thin it out a bit by adding some milk.  I used about a cup of vanilla yogurt once and added a 1/4 cup of milk to thin it a tad and worked great! This tropical smoothie recipe is made with mango, pineapple, banana and uses coconut milk for a delicious and healthy start to your day. Now that we are no longer eating toast or cereal for breakfast, smoothies have become my stand by for a quick, easy and delicious breakfast.  It took a while for my kids to get on board with drinking their breakfast, but they now request a smoothie in the morning.  While I mostly stick to strawberry and banana for the kids, I wanted something a little different to start the morning and the coconut milk was begging to be used in a tropical smoothie. I already had a huge bag of frozen mango from Costco in my freezer.
