Homemade Boiled Pretzels

My kids are pretzel fanatics.  I stopped buying pretzels at the grocery store years ago because I got tired of the constant requests for pretzels for breakfast, lunch and dinner. Now, they are a special treat.  Even more than they love eating pretzels, my kids love to make them.  We've made some before using a Guy Fieri recipe, which is a good recipe.  But this recipe makes amazing pretzels! I'd never seen a pretzel recipe that calls for boiling them first before baking them.  It's really a super quick step and totally worth the effort. I had a hard time getting my pretzels to get dark brown so I would suggest making sure your oven is fully pre-heated (I didn't wait) before baking.  In order to make the pretzels, the recipe has you cut up the dough and then roll it out like snakes, but that was hard for my kids.   I'm not sure how I ever survived without Hoe Cake.  It is my go-to super quick breakfast bread as it is basically a very large biscuit. It takes way less time than rolling and cutting biscuits so it's great for a large crowd, too.  I use it for biscuits and gravy as well as the bread for dipping over easy eggs. It's a fabulous addition to the morning routine. Southern Plate,the blog where I found the Hoe Cake recipe, prefers if I just link over to her so I won't put the full recipe here, but I did want to share because I absolutely love Hoe Cake!  When I make the recipe, however, I change it up a bit. I have made more than my fair share of scones in the past few years.  Most scone recipes require the same basic techniques and ingredients and they are quite simple and quick to make.  These glazed cinnamon scones, however, are just amazing!  I couldn't believe how tender and flaky they are.  I'm not really sure why they turned out so much better than other recipes because they use the same basic ingredients and techniques.  Maybe it was the chilly weather the day I made them or the fact that I haven't had a scone in a while. I had never made a cinnamon roll in my life until just after I got married. Up until then cinnamon rolls that came out of my oven came out of a tube. I had picked up a frugal living book at the thrift shop and one of the author's main points was to save money by cooking from scratch.  One of the recipes she included in the book was for cinnamon rolls.  I have never looked at a tube of cinnamon rolls again. I have tried several recipes for cinnamon rolls and they are all good, but this one is over the top spectacular.  This is my adaptation of Pioneer Woman's cinnamon rolls mostly following her recipe but using organic alternatives. Don't skip the icing or make just plain icing -- the icing makes these rolls! I make "powdered sucanat" to use in place of powdered sugar when color doesn't matter.  I just whir some sucanat in my food processor blender until it's powder. We love scones around here.  Scones are super quick to make and freeze very well! One of my husband's favorite fall treats are the pumpkin scones at Starbucks.   I've never had one, but he says these are just as good (if not better, of course!). With scones, try not to over work the dough.  All of the flour may not get worked in all the way and that's just fine! Homemade Flour Tortillas

These are easy. Really. They just take a little time to roll and cook. When my kids are older, I'm putting them in charge of making the tortillas! Plus, these are so much more delicious than store bought tortillas! But even I will admit that I'm usually lazy and just buy a pack instead of making them myself. The trick is to make a big batch (preferably not while trying to get dinner on the table) and freeze them. Coconut Flour Cupcake Muffins

I have never baked with coconut flour before.  We don't have any food allergies and coconut flour is fairly expensive so I just never bothered.  But there was something about this recipe that called my name.   I actually special ordered the coconut flour just to make these! These are supposed to be "muffins", but they could easily pass for cupcakes.  I'm seriously considering making these for our next birthday party with frosting on top.  They are so full of good stuff -- coconut flour, coconut oil, honey and eggs -- that it's hard to pass them up as a healthy treat.   I added in a handful of mini-chocolate chips and my kids ate the entire pan! This summer we have been attending the early service on Sunday morning at our church. We had get 5 people up, showered, dressed, fed and out the door by 8:30 AM. Some of you are rolling on the floor laughing as you think about getting all 5 of your kids out the door by 7:00 AM for school. Hey, I'm on summer vacation mode here! Anyway, I usually prepped or made breakfast on Saturday evening to make the morning easier. When I saw this recipe at Annie's Eats, it looked like it would fit the bill. Except I have no idea how you would freshly bake this for an early morning. I guess you could let it rise in the fridge overnight, but I don't have good luck with that. Instead I under baked it a smidge the night before and just popped it in the toaster oven to finish on Sunday morning.
